Irish Cocoa Muffins

- 1 cup melted vanilla frozen yoghurt shopping list
- 2 tbsp Irish whisky shopping list
- ½ tbsp instant coffee shopping list
- 2 tbsp unsweetened cocoa shopping list
- 1/3 cup oil shopping list
- 2 eggs shopping list
- 1 cup flour shopping list
- 1 cup oat flour shopping list
- 8 pkts Xylitol+ (or ¼ cup sugar) shopping list
- 2 ½ tsp baking powder shopping list
- ½ tsp salt shopping list
- 9 mini marshmallows shopping list
How to make it
- Preheat the oven to 375°F
- Whisk together frozen yoghurt, whisky, coffee, cocoa, oil and eggs in a large bowl.
- Add the flours, xylitol, baking powder and salt and stir just to combine.
- Portion into muffin tins.
- Press a mini marshmallow into the centre of each cup of batter.
- Bake for 17-20 minutes or until muffins test done. Cool for 5 minutes before removing from pans to wire racks.
