Caramel Apple Almond Muffins

- 1/2 cup unsweetened applesauce (I used homemade) shopping list
- 1/4 cup stevia baking blend (I used Krisda) shopping list
- 2 tbsp dark brown sugar shopping list
- 1 tsp vanilla extract shopping list
- 1/4 cup unsweetened almond milk shopping list
- 1 tsp rice vinegar shopping list
- 1 cup whole wheat pastry flour shopping list
- 1/2 tsp baking soda shopping list
- 1/4 tsp baking powder shopping list
- 1/4 tsp sea salt shopping list
- 1/2 tsp cinnamon shopping list
- 1 tbsp dried whole egg powder (or one egg) shopping list
- 2 packets caramel-flavoured stevia (I used Krisda) shopping list
- 1 apple, peeled cored and diced shopping list
- 3 tbsp slivered almonds, toasted shopping list
- 1/2 tbsp large-flake rolled oats shopping list
- 1/2 tbsp flaked almonds shopping list
- 1 tsp turbinado sugar shopping list
How to make it
- Preheat oven to 375F, grease 4 jumbo muffin cups or line with paper liners.
- In a bowl, beat the applesauce, stevia baking blend, brown sugar, vanilla, almond milk and rice vinegar until smooth.
- Stir in the flour, baking soda, baking powder, salt, cinnamon, egg powder and caramel stevia.
- Fold in the apple and slivered almonds.
- Portion into the muffin cups and top with oats, almonds and sugar.
- Bake 30 minutes.
- Cool in the tin for 5 minutes, then turn out onto a wire rack and cool completely.
