Chicken & Black Bean Taco Pizzettas

- 1 1/2 recipe of Wolfgang Puck's pizza dough (I used agave instead of honey this time) shopping list

- 2 cups monterey jack cheese shopping list
- 1/2 cup medium cheddar cheese shopping list
- homemade fresh salsa (recipe below) shopping list
- 1 cup roasted chicken breast, diced, mixed with taco seasoning shopping list
- additional taco seasoning, for sprinkling shopping list
- 1 can organic cup black beans shopping list
- 1/4 cup scallions, diced shopping list
- fresh cilantro, chopped, for garnish shopping list

- Fire roasted Tomato Salsa: shopping list
- 15 oz organic fire roasted tomatoes shopping list
- 1 fresh vine-ripened tomato, halved and seeded shopping list
- 1/2 a sweet yellow onion shopping list
- 1 clove garlic shopping list
- 1 jalapeno pepper, halved (remove or keep seeds for mild or hot) shopping list
- 1/8 cup fresh cilantro shopping list
- juice of one fresh lime shopping list
- sea salt, to taste shopping list
How to make it
- make salsa:
- Place all ingredients in food processor and pulse until everything is finely chopped. Drain excess liquid with a strainer and place in container in fridge until ready for use.
- Prepare pizza dough, as instructed.
- To assemble:
- Preheat oven to 450F degrees. On floured work surface, divide dough into 12 balls and roll into circles (as thick or as thin as you like) Place rolled out pizza dough on parchment lined baking sheets (I was able to fit 6 per sheet).
- Sprinkle cheeses across each crust. Top each with a few teaspoons of salsa, sprinkle of green onions and beans over the cheese. Sprinkle lightly with additional taco seasoning.
- Bake pizzettas for 7 minutes, remove from oven, top with chicken (pressing down into the cheese a bit) and bake for another 5-8 minutes, or until the cheese is golden and bubbly. Remove from oven and sprinkle with fresh cilantro before serving.
