How to make it

  • Preheat the oven to 350. Lightly grease a large loaf pan (
  • Mix together coconut oil and sugars. Mix well. Add eggs one at a time, beating well after each addition. Add vanilla extract.
  • In a second bowl, Whisk together the flours, baking powder, baking soda and salt.
  • In a third bowl, mash bananas (I use a potato masher or the mixer) and combine with the coconut milk.
  • Gradually mix the dry ingredients with the wet ingredients, starting and ending with the dry ingredients. Mix until just combined. Stir in the pecans and coconut.
  • Pour the batter in the prepared pan. Bake approx 65 mins or until toothpick inserted comes out clean.
  • This can be made into muffins too.
