Simply Stir-fry

- 1 lb. boneless, skinless chicken breast, cut into bite-sized cubes shopping list
- 1 1/2 c. broccoli florets, steamed until just tender shopping list
- 1 red bell pepper, thinly sliced shopping list
- 1/2 green bell pepper, thinly sliced shopping list
- 1 sweet yellow onion, thinly sliced shopping list
- 1/2 C. cashews, roughly chopped shopping list
- 2 green onions, thinly sliced shopping list
- 1/2 C. hoisin sauce (or enough to coat all of the dishes) shopping list
- 2 C. cooked rice shopping list
How to make it
- Heat olive oil in a large skillet over medium-high heat.
- Brown the chicken until cooked trough.
- Add the peppers and onions and saute until cooked to desired tenderness.
- Add broccoli and cashews and heat through.
- Add Hoisin sauce and mix thoroughly.
- Serve over cooked rice topped with sliced green onions.
- Note: To make this a lower-carb dish, steam some cauliflower and press through a ricer to make cauliflower "rice".
