Zucchini Parmesan

- 1/3 cup Italian-style seasoned bread crumbs shopping list
- 1 tablespoon grated parmesan cheese shopping list
- 2 medium zucchini cut into 3-inch long,1/2-inch thick slices shopping list
- 2 egg whites, lightly beaten shopping list
- 1 can (18 ounces) crushed tomatoes shopping list
- 1 teaspoon dried Italian seasoning shopping list
- 1 cup shredded mozzarella cheese shopping list
How to make it
- Preheat oven to 400.F. Spray a baking sheet with vegetable cooking spray.
- In a small bowl, combine bread crumbs and parmesan.Mix well.
- Dip zucchini in egg whites. Dredge zucchini in some bread crumb mixture, patting so crumbs adhere. Place on prepared baking sheet. Reserve remaining crumb mixture.
- Bake, turning once, until golden, about 15 minutes.
- Meanwhile, spray a 2-quart baking dish with vegetable cooking spray. Combine tomatoes and Italian seasoning in prepared dish. mix well.
- Arrange baked zucchini over tomatoes. Sprinkle with mozzarella and remaining crumb mixture. Bake until casserole is heated through and cheese melts, about 10 minutes. Serve immediately.
