How to make it

  • Preheat oven to 400.F. Spray a baking sheet with vegetable cooking spray.
  • In a small bowl, combine bread crumbs and parmesan.Mix well.
  • Dip zucchini in egg whites. Dredge zucchini in some bread crumb mixture, patting so crumbs adhere. Place on prepared baking sheet. Reserve remaining crumb mixture.
  • Bake, turning once, until golden, about 15 minutes.
  • Meanwhile, spray a 2-quart baking dish with vegetable cooking spray. Combine tomatoes and Italian seasoning in prepared dish. mix well.
  • Arrange baked zucchini over tomatoes. Sprinkle with mozzarella and remaining crumb mixture. Bake until casserole is heated through and cheese melts, about 10 minutes. Serve immediately.

    i was looking on ar for a recipe like this. i am so glad i thought to look on gr. i am gonna make this soon with cooked pasta mixed in the bottom of the casserole to make it a main dish. i will let you know how that turns out

    I love Eggplant Parmesan. I never thought of using Zucchini, I know this is going to be good.
