Steak Fajitas

- 1/4 cup orange juice shopping list
- 1 lime, juiced shopping list
- 2 tbls. olive oil shopping list
- 1 clove garlic, chopped shopping list
- 1 1/2 chipoltes in adobo sauce shopping list
- 1 1/2 tbls. cilantro, chopped (I use parsley) shopping list
- 1/2 tsp. cumin shopping list
- 1/2 tsp. salt shopping list
- 1 1 lb. steak of your choice shopping list
- olive oil shopping list
- 1 small red pepper, sliced shopping list
- 1 small green pepper, sliced shopping list
- 1 onion, sliced shopping list
- salt and pepper shopping list
- flour totillas shopping list
How to make it
- Add first 8 ingredients to blender and puree
- Put into zip bag with meat and marinate 3-4 hours
- In large skillet, add oil and heat to medium high
- Add steak and cook 4-5-minutes each side
- Remove from skillet and rest
- Add a little oil to same skillet
- Add pepper, onion, salt and pepper
- Saute until tender crisp
- Heat tortillas, either in microwave or on stove top over open flame
- Slice steak in thin slices (If using skirt steak or something like that, cut against the grain and on the diagonal)
- Fill tortilla with steak, veggies and desired toppings

This was good. I had bought stir fry beef to use. After marinating the beef was a little tough. I'll wait until steak is on sale to make this again.
