Breaded Eggplant Sammich On Wheat Bread

- 1 eggplant shopping list
- fresh mozzarella cheese shopping list
- Provologne cheese shopping list
- 6-8 grape tomatoes, sliced and diced shopping list
- Handful of fresh basil leaves, about 3-4 per sandwich shopping list
- flour shopping list
- 1 egg shopping list
- bread Crumbs (we used panko) shopping list
- Wheat bread shopping list
- salt shopping list
- pepper shopping list
How to make it
- Cut off the stem from the eggplant and use a peeler to remove all the skin. Slice the eggplant into filet or steak shaped pieces. one eggplant will yield about 4 large "steaks".
- Put a good handful of flour into a bowl, enough to cover the eggplant pieces. Make sure each piece is thoroughly covered in the flour.
- Crack egg into a small bowl and mix the white and yolk together. Slather the eggplant thoroughly with egg.
- Now take the breadcrumbs and add salt and pepper to your liking to the mic, and then generously cover the eggplant on all sides.
- Once the eggplant is all dressed up, fry on a stovetop over medium-high heat for about 10 minutes. Don't let the breadcrumbs get burnt, but let them turn a rich golden brown.
- Slice your wheat bread into whatever size suits you. Toast the bread enough to get it crisp. Put the eggplant, a dash of mozzarella and provologne, basil leaves, and grape tomatoes on the sammich.
- Place sammich in your mouth. Chew. Swallow. Repeat.
