Black Bean & Couscous Salad

- 1 cup uncooked couscous shopping list
- 1 1/4 cups chicken broth shopping list
- 3 tablespoons virgin olive oil shopping list
- 2 tablespoons lime juice shopping list
- 1 teaspoon red wine vinegar shopping list
- 1/2 teaspoon ground cumin shopping list
- 8 greens onions chopped shopping list
- 1/2 red bell pepper seeded and chopped shopping list
- 1/4 cup cilantro shopping list
- 1 cup frozen corn kernels thawed shopping list
- 1 (15 ounce) can black beans drained and washed shopping list
- salt and pepper to taste shopping list
- 1 teaspoon dill shopping list
- 1 teaspoon parsley shopping list
How to make it
- 1. Place the couscous in a bowl and heat the chicken broth in the microwave and then pour on the couscous and cover and let stand for 5 minutes.
- 2. In another bowl whisk together the olive oil, lime juice, vinegar and cumin, dill, parsley, then add the green onions, red pepper, cilantro, corn and beans toss to coat.
- 3. Fluff the couscous and add the other ingredients and mix well, season with the salt and pepper to taste then cover and let chill.
