Rum Raisin Bars

- 1/2 cup light rum shopping list
- 1 3/4 cups raisins-mixture of dark and golden shopping list
- 1 stick unsalted butter, room temperature shopping list
- 1 1/2 cups packed light brown sugar shopping list
- 2 large eggs shopping list
- 1 t vanilla extract shopping list
- 1 1/2 cups all purpose flour shopping list
- 1 t salt shopping list
How to make it
- In a medium bowl, combine rum and the raisins
- Cover and let soak for at least 6 hours or overnight
- Preheat oven to 350 degrees
- Coat a 9x9 inch baking pan with nonstick cooking spray
- In a large bowl, use an electric mixer to beat the butter and brown sugar until lightened
- Beat in eggs and vanilla until well combined
- Sift flour and salt together into the batter
- Mix gently until no trace of the dry ingredients remain
- Strain the rum soaked raisin (discard rum or save for another use, or just drink, LOL)
- Mix raisins into dough
- Using a silicone spatula, spread the batter evenly into the prepared baking pan
- You may have to use your finger, as the batter is very sticky(flour fingers first)
- Bake for 30 minutes or until toothpick inserted in center comes out clean
- Let cool on a rack for 1 hour
- Cut just before serving
