Fried Wedges

- small red potatoes shopping list
- oil, I used olive oil shopping list
- salt shopping list
- pepper mix (your favorite) shopping list
- shredded cheddar cheese shopping list
How to make it
- Cut potatoes into small wedges (6 or more per potato)
- Heat oil over medium heat until drops of water "dance" on top.
- Cook potatoes in batches (depending on size of pan using). They should be submerged in the oil completely.
- Cook until outside turns golden brown.
- Remove with slotted spoon onto paper towel covered plate.
- Sprinkle with salt and pepper mix. Let cool 30 sec and sprinkle with some cheese.
- Repeat these last steps for all the batches layering the potatoes on the plate.
