[section]For Carolina Style Mustard Based Sauce[/section]
3 cups whole grain mustard
2 cups spicy brown, Dijon or prepared mustard(your choice)
1 stick butter
2 large onions, grated
3 cloves garlic, minced
1 cup cider vinegar
1 cup white wine vinegar
1 cup cup honey
1cup brown sugar
1T dry mustard
1/2 cup molasses
1T Worcestershire sauce
1T liquid smoke
1-3t cayenne pepper
Juice from 3 lemons
1-3 shots whiskey(JD is my preference...you don't need to use the top shelf stuff! :)
[section]For KC Style Tomato Based Sauce[/section]
6 cups tomato sauce
1/2 stick butter
2 large onions, grated
2 cloves garlic
1/2 cup Dijon mustard
1 cup honey
1 cup brown sugar
3/4 cup molasses
1 cup red wine vinegar(I like to use the one with garlic)
1 1/2T liquid smoke
1T Worcestershire sauce
1T paprika(I use smoked)
1T cayenne(less, if desired)
1T chili powder
2t red pepper flakes(optional)
1-3 shots Whiskey, as above
kosher or sea salt and fresh ground black pepper
How to make it
For both recipes, just add everything* to your slow cooker(spray with no cook spray) and cook on low for at least 4 hours, but for as long as you want to deepen the colors and flavors. You can also take the lid off the slow cooker and stir well after the 4 hours is up, to thicken.
Taste at that time and adjust to your tastes with more vinegar, honey or brown sugar or cayenne or hot pepper flakes, etc.
***Please note: If using the whiskey please add at the very end of cooking.
