Chicken Tomato Panzanella

- 6 cups cubed French bread shopping list
- 3 T olive oil, divided shopping list
- 1 medium, chopped shopping list
- 2 red bell peppers,chopped shopping list
- 8 oz mushrooms,quartered shopping list
- 1 lb boneless, skinless, chicken thighs, cubed shopping list
- 1/2 t dried italian herbs shopping list
- 1 (28oz can) crushed plum tomatoes in puree shopping list
- 1 T balsamic vinegar shopping list
- 4 oz mozzarella cheese, sliced shopping list
- 2 plum tomatoes, sliced shopping list
How to make it
- Heat oven to 450 degrees
- In a bowl, gently toss bread cubes with 1 T oil.
- Season with salt and pepper to taste
- Arrange bread in a single layer on baking sheet and bake 10 minutes in preheated oven
- Transfer to a large casserole dish that has been sprayed with cooking spray
- In a large skillet over medium-high heat, heat remaining oil, add onion,peppers and mushrooms
- Cook for 5 minutes
- Add cubed chicken and cook for about 5 minutes or until chicken is browned
- Stir frequently
- Stir in italian herbs, crushed tomatoes and vinegar
- Increase heat to high and bring to a boil
- Reduce heat to medium and let simmer 5 minutes
- Spoon chicken mixture over bread in casserole dish
- Top with mozzarella and sliced tomatoes
- Bake for 15 minutes @ 400 or until heated through

Just uploaded a pic. It was wonderful!!! I've always enjoyed scalloped tomatoes so found this to be a super meal. I cheated a bit by using day-old white bread instead of french, and fire-roasted diced tomatoes instead of crushed, plus just a pinch...more
