Creole Tuna( Seafood Okra)

- 1/2 cup chopped onion shopping list
- 1 clove garlic, minced shopping list
- 3 Tbsp butter shopping list
- 3 Tbsp all-purpose flour shopping list
- 1 15 ounce can tomatoes, cut up shopping list
- 1/2 cup chopped green pepper shopping list
- 2 bay leaves shopping list
- 1 tsp dried thyme, crushed shopping list
- 1 tsp dried oregano, crushed shopping list
- 1/4 to 1/2 tsp bottled hot pepper sauce shopping list
- 10 ounces(2 cups) okra, cut up or package frozen small okra shopping list
- 2 canned tuna shopping list
- Hot cooked rice shopping list
How to make it
- * To avoid the thickness of Okra, soak okra in water and salt for 15 minutes, changed the water twice. Then saute( without oil) Okra in a pan for 3 min untill it get dry or there is no water.
- In large saucepan cook onion and garlic in butter till onion is tender but not brown.
- Blend in flour. Cook, stirring constantly, till flour is golden brown.
- Stir in undrained tomatoes, green pepper, bay leaves, oregano, thyme, hot pepper sauce, 1 1/2 cups water, and 1/2 tsp salt. Bring to boiling; reduce heat and simmer, covered, 20 minutes.
- Remove bay leaves. Stir in the fresh or frozen okra; bring mixture to boiling. Simmer for 8 minutes. Add Tuna into okra mixture and heat through, about 2 minutes. (It can be eaten as it is or can be served with hot cooked rice).
- Note: Spices can be replaced or voided. Use only oregano and salt
- Tuna can be replaced with canned shrimp and crab meat.
