How to make it

  • * To avoid the thickness of Okra, soak okra in water and salt for 15 minutes, changed the water twice. Then saute( without oil) Okra in a pan for 3 min untill it get dry or there is no water.
  • In large saucepan cook onion and garlic in butter till onion is tender but not brown.
  • Blend in flour. Cook, stirring constantly, till flour is golden brown.
  • Stir in undrained tomatoes, green pepper, bay leaves, oregano, thyme, hot pepper sauce, 1 1/2 cups water, and 1/2 tsp salt. Bring to boiling; reduce heat and simmer, covered, 20 minutes.
  • Remove bay leaves. Stir in the fresh or frozen okra; bring mixture to boiling. Simmer for 8 minutes. Add Tuna into okra mixture and heat through, about 2 minutes. (It can be eaten as it is or can be served with hot cooked rice).
  • Note: Spices can be replaced or voided. Use only oregano and salt
  • Tuna can be replaced with canned shrimp and crab meat.
