  • Method:
  • Slice onions, not too thin. In large saucepan, add onions, 1/4 cup water and pinch of salt. Sweat onions until fork tender, but not too soft (about 10-15 minutes). Add tomato paste. Stir until incorporated in onions. Add fresh, coarse-ground black pepper to taste (I use at least 1/4 tsp.) Stir, let cook until onions are not quite soft (2-3 minutes).
