How to make it

  • Place olive oil in saute pan over medium/high heat.
  • Add diced onion and peppers and brown slightly.
  • Stir in garlic, salt and pepper.
  • Add lentils and cook another minute.
  • Stir in chicken broth, and pepper flakes (if using) and cook covered over low heat for approx. 25 minutes.
  • Make a slurry with the flour and water and mix into the lentil mixture. Raise heat till mixture bubbles and thickens (5 mins). Lentils will become creamy.
  • Taste and add more salt and pepper if needed.
