Creamy Lentils

- 2 Tbsp. olive oil shopping list
- 1/2 large spanish onion- diced shopping list
- 1/2 cup green pepper- diced shopping list
- 1/2 cup red pepper- diced shopping list
- 1 Tbsp crushed garlic shopping list
- salt and ground black pepper shopping list
- 1 cup red lentils (any variety is fine) shopping list
- 2 cups chicken broth shopping list
- 1 Tbsp flour (make a slurry with 1/4 c water) shopping list
- 1/2 tsp. crushed red pepper flakes (optional heat) shopping list
How to make it
- Place olive oil in saute pan over medium/high heat.
- Add diced onion and peppers and brown slightly.
- Stir in garlic, salt and pepper.
- Add lentils and cook another minute.
- Stir in chicken broth, and pepper flakes (if using) and cook covered over low heat for approx. 25 minutes.
- Make a slurry with the flour and water and mix into the lentil mixture. Raise heat till mixture bubbles and thickens (5 mins). Lentils will become creamy.
- Taste and add more salt and pepper if needed.
