Bacon Potato Salad

- 2 lbs. red bliss or new potatoes, cut into 1/2 in. cubes shopping list
- 1 c. Canola Cholesterol free mayonnaise shopping list
- 1/3 c. diced celery shopping list
- 2 tbs. crumbled cooked bacon or bacon bits shopping list
- 2 tbs. chopped fresh chives shopping list
- 1 tsp. Deli mustard shopping list
- 1/2 tsp. apple cider vinegar shopping list
- 1/4 tsp. sugar shopping list
How to make it
- Cover potatoes with water in 4 quart saucepot. Bring to a boil over high heat. Reduce heat to low and simmer uncovered 8 minutes or until potatoes are tender, dreain and cool slightly.
- Meanwhile, combine remaining ingredients in large bowl. Add potatoes and toss to coat. Season, if desired, with salt and ground black pepper. Serve chilled or at room temerature.
