White Chocolate Oatmeal Cookies

- 1 cup butter, softened shopping list
- 1/2 cup sugar shopping list
- 1/2 cup packed brown sugar shopping list
- 1 egg shopping list
- 3 tsp vanilla shopping list
- 1 tsp coconut extract shopping list
- 1 1/2 cups quick-cooking oats shopping list
- 1 1/4 cups flour shopping list
- 1 tsp salt shopping list
- 1 tsp baking soda shopping list
- 1 cup flaked coconut, toasted shopping list
- 6 squares (1 oz. each) white baking chocolate, cut into 1/2 inch chunks shopping list
- Additional sugar shopping list
How to make it
- In a mixing bowl, cream the butter and both of the sugars
- Add the egg and both of the extracts.
- Mix well
- Combine the oats, flour, salt, and baking soda
- Gradually add to the creamed mixture
- Stir in the coconut and the chocolate
- Drop by tablespoonfuls 3 inches apart onto ungreased baking sheets
- Flatten with a glass dipped in sugar.
- Bake at 350 F for 8-9 minutes or until golden brown
- Cool for 1 minute before removing to wire racks
