Vegan Crockpot Mediterranean Stew

- 1 eggplant -- chopped shopping list
- 2 zucchini -- chopped shopping list
- 1 red or green bell pepper, seeded/chopped shopping list
- 1 onion -- chopped shopping list
- 3 large tomatoes -- chopped shopping list
- 2 cans garbanzo beans -- (14 oz.) drained/rinsed shopping list
- 1 Tbs oregano shopping list
- Freshly ground black pepper shopping list
- salt shopping list
- 1 can artichoke hearts packed in water -- (14 oz.) drained/quartered shopping list
- 1 package rice or buckwheat noodles -- cooked shopping list
- crushed red pepper flakes -- to taste/opt shopping list
How to make it
- Add all ingredients except for noodles to the crock pot and stir well.
- (Sometimes I also add a Tbs of tomato paste for a thicker stew.)
- Cook on low for 8 hours.
- Serve over the cooked noodles
