Lime Squares

- Crust: shopping list
- 1 Cup butter shopping list
- 1/2 Cup Confectioners sugar shopping list
- 2 Cups All Purpose flour shopping list
- 1/4 teaspoon salt shopping list
- Filling: shopping list
- 4 Large eggs shopping list
- 2 Cups sugar shopping list
- 6 Tablespoons All Purpose flour shopping list
- 1 teaspoon baking powder shopping list
- 1/4 Cup + 2 Tablespoons lime juice (fresh squeezed or bottled) shopping list
- 2 teaspoons Grated lime zest shopping list
- Confectioners sugar for garnish shopping list
How to make it
- Spray a 9 X 13 pan with non-stick cooking spray and set aside while you make your crust. Preheat your oven to 350 degrees.
- Combine all of the crust ingredients in a food processor and pulse until completely mixed and forms a ball.
- Pat the dough into the 9 X 13 pan and smooth out with your hand (use a bit of flour if need be.), and prick with a fork. Bake for about 10-12 minutes, or until just barely turning light brown.
- In a medium bowl, combine all of the filling ingredients and whisk until blended. This should only take about a minute or so. Pour the filling onto your prebaked crust and place back in the oven. Bake for 30 minutes and check the very center of the squares with a toothpick. If it comes out clean (the top of the bars will be light brown in color) the bars are done. Don't be afraid to let them bake for an additional 5-10 minutes...better to have them bake a bit longer than to come out runny.
- Let the bars cool on a rack. Once completely cool, cut them from the pan and dust with confectioners sugar.
