How to make it

  • Preheat oven to 400.
  • For the filling:
  • In saucepan mix together raisins, 1 1/2c sugar, & 1c water.
  • Cook just to boiling.
  • In medium bowl, beat together yolks, salt, lemon juice & half-n-half.
  • Add to raisins.
  • Cook just until boiling again.
  • In small bowl, mix together 1/2c water & cornstarch.
  • Remove raisin mix from heat & add cornstarch mix.
  • Return to heat.
  • Cook, stirring, over med-med/high heat until thickened.
  • Pour into baked pie shell.
  • Set aside.
  • Now make the merengue:
  • Slowly mix egg whites, salt, & 6T sugar together.
  • Beat into soft peaks.
  • Spread onto raisin mixture.
  • Bake 8min or until merengue starts to turn golden brown.
