Gramma's Raisin Cream Pie

- 1 1/2c raisins shopping list
- 1 1/2c plus 6Tbsp sugar, DIVIDED shopping list
- about 1c plus 1/2c water, DIVIDED shopping list
- 2 eggs plus 1 extra white, SEPARATED shopping list
- 1 1/2c half-n-half shopping list
- 4 heaping tsp cornstarch shopping list
- pinch of salt shopping list
- squeeze of lemon juice shopping list
- baked pie shell shopping list
How to make it
- Preheat oven to 400.
- For the filling:
- In saucepan mix together raisins, 1 1/2c sugar, & 1c water.
- Cook just to boiling.
- In medium bowl, beat together yolks, salt, lemon juice & half-n-half.
- Add to raisins.
- Cook just until boiling again.
- In small bowl, mix together 1/2c water & cornstarch.
- Remove raisin mix from heat & add cornstarch mix.
- Return to heat.
- Cook, stirring, over med-med/high heat until thickened.
- Pour into baked pie shell.
- Set aside.
- Now make the merengue:
- Slowly mix egg whites, salt, & 6T sugar together.
- Beat into soft peaks.
- Spread onto raisin mixture.
- Bake 8min or until merengue starts to turn golden brown.
