Auntie Lou's Seafood Chowder

- 1 quart clam broth (available at most markets at the fish counter) shopping list
- 3 tsp Clam Base (optional) shopping list
- 2 cups water Only use if using the clam base shopping list
- 3-4 red bliss potatoes, diced shopping list
- 1-2 celery ribs, chopped. shopping list
- 1 medium onion, chopped shopping list
- 2-3 tsp dried thyme shopping list
- 3/4 lb haddock, or other white fish shopping list
- 1/2 1l. shrimp, peeled, deveined, and sliced in half horizontally shopping list
- 1/3 lb. scallops shopping list
- 3/4 lb. fresh minced clams shopping list
- 1/2 cup white wine shopping list
- 1/2 lb. bacon, rendered and removed shopping list
- 1 1/2 cups heavy cream shopping list
- 1/4-1/2 cup flour (use more if you like chowder thick) shopping list
- salt & black pepper to taste shopping list
How to make it
- In a large dutch oven, saute bacon until crisp. Remove and reserve. Add onion, and celery and saute until soft, then stir in Flour and cook for 1-3 minutes stirring constantly. Add wine and cook for one-two minutes. Add clam broth (base & water if using) and potatoes. Bring to a boil and simmer until potatoes are soft. Add heavy cream and remaining ingredients. Simmer until fish and seafood are opaque. Adjust salt and pepper to taste.
- Top with crumbled bacon if desired.
