Thai Green Chili Paste

- 10 black peppercorns shopping list
- 2 tsp cumin seeds shopping list
- 2 tsp coriander seeds shopping list
- 10 green chillies, roughly chopped shopping list
- 5 shallots, roughly chopped shopping list
- 2 garlic cloves shopping list
- 2cm knob fresh ginger root shopping list
- 6 stalks of lemon grass, roughly chopped shopping list
- 12 kaffir lime leaves shopping list
- pinch of cinnamon shopping list
- ½ tsp turmeric shopping list
- 1 tsp salt shopping list
- 1 tbsp olive oil shopping list
- 1 tsp chilli oil shopping list
- 1 tbsp palm sugar shopping list
How to make it
- Make the curry paste.
- Toast the peppercorns, cumin and coriander seeds in a frying pan over a low heat until fragrant.
- Grind them in a mortar and pestle.
- Transfer the spices to a blender; add the remaining paste ingredients and blitz until smooth.
- This will take a good 5 minutes or so.
