General Tso Chicken

- 1 pound boneless chicken thighs shopping list
- 1 tablespoon oil shopping list
- 1/2 teaspoon red peppr flakes or 1/8 teaspoon cayenne pepper shopping list
- 6 tablespoons lite or low sodium soy sauce shopping list
- 4 tablespoons sherry(Not cooking sherry)or dry white wine shopping list
- 2 garlic cloves minced shopping list
- 1 teaspoon hot sauce shopping list
- 3 tablespoons rice wine vinegar or 2 tablespoons white vinegar shopping list
- 4 tablespoons sugar shopping list
- 1 tablespoon corn starch shopping list
- 3 tablespoons cool water shopping list
- 1 teaspoon peeled minced ginger shopping list
- 1/2 cup flour shopping list
- 1/2 cup corn starch shopping list
- 1 teaspoon baking powder shopping list
- 1 teaspoon baking soda shopping list
- 1 teaspoon sugar shopping list
- 1 teaspoon salt shopping list
- 1 egg slightly beaten shopping list
- 2/3 cups or 8 tablespoons ice cold water shopping list
- 1 green onion chopped shopping list
- oil for frying shopping list
How to make it
- In a medium bowl mix 1/2 cup flour,1/2 cup corn starch,baking powder,baking
- soda,1 teaspoon sugar,1 teaspoon salt,egg and cold water until smooth and set
- aside.Preheat oven 300 degrees. Remove excess skin from chicken. Cut each
- chicken thigh into four to six pieces depending on their size and place into the batter making sure to coat them evenly. In a large frying pan or wok heat oil to 350 degrees and fry several pieces of the chicken at a time 4 to 5 minutes on each side until golden brown and chicken is completly cooked. Drain chicken on
- paper towels and place into oven to keep them hot and crispy. In a small sauce
- pot heat 1 tablespoon oil add pepper flakes,garlic and ginger to infuse oil with
- flavors for about 30 seconds. Remove from heat add soy sauce,sherry,
- rice wine vinegar,hot sauce and sugar. In a small bowl mix 1 tablespoon corn starch with 3 tablespoons water. Return sauce pot to heat let liquid come to a boil and wisk in corn starch mixture.Continue to stir until liquid becomes thick about 30 seconds to 1 minute. Pour sauce into a large bowl. Remove chicken from oven add to sauce bowl and coat the chicken with the sauce.Place chicken on serving dish.Top with green onions.Serve right away with steamed rice. Enjoy!!
