Healthier Upside Down Apple Cake

- 5 apples, peeled and sliced into 12ths shopping list

- 2 tbsp butter, softened shopping list
- 2/3 cup low-fat cream cheese, softened shopping list
- 1 cup sugar shopping list
- 1/4 cup brown sugar shopping list
- 1 tbsp vanilla shopping list
- 1/2 tbsp maple extract shopping list
- 1 egg shopping list
- 2 1/2 tbsp ground flaxseed shopping list
- 1 1/4 cups whole wheat flour shopping list
- 2 tsp baking powder shopping list
- 1 tsp baking soda shopping list
- 1/2 tsp salt shopping list
- 1 tsp allspice shopping list
- 1 tbsp cinnamon shopping list
- 1 1/3 cups buttermilk shopping list
How to make it
- Heat oven to 350ºF, grease a 10" cake pan.
- Combine sugar, orange juice, lemon juice and butter in a deep skillet, bring to a boil.
- Cook for 5 minutes, then add apples, and cook over medium heat for 15 minutes, until soft and caramelized.
- Pour the apple mixture into prepared cake pan and spread to an even layer.
- In a bowl, beat butter, cream cheese, sugar, brown sugar, vanilla, maple extract, and egg until smooth.
- In another bowl, combine flour, baking powder, baking soda, salt, allspice, and cinnamon.
- Beat flour mixture and buttermilk alternately into the creamed ingredients.
- Pour batter over apples and spread evenly.
- Bake 1 hour.
- Cool in pan on wire rack 10 minutes. Invert onto a serving plate.
