sweet and spicy tuna sandwich

- fresh multi seed brown bread - 2 slices shopping list
- tinned tuna in spring water or sunflower oil preferably (brine is too much salt) shopping list
- extra light, quality made mayo shopping list
- sweet onion relesh shopping list
- chilli mince (will be in your asian supermarket in little jars) shopping list
- fresh chopped parsley shopping list
- really small fine cuts of raw peeled carrot shopping list
- a little black ground pepper (no salt needed in the slightest) shopping list
How to make it
- put around 2 heaped tablespoons (or the desired amount) full of mayo with the tuna in a semi deep bowl (drain the oil from the tuna first of all).
- also add a tablespoon of the sweet onion relish
- little tea spoon full of chilli mince (eqivalent to one chilli)
- a sprinkle of freshly chopped parsley (the amount you wish).
- third of a medium carrot, peeled and cut into very small pieces.
- a sprinkle of ground black pepper.
- mix all together very well (try not to mash) and add between your bread.
- (you can butter the bread lightly if you wish)
- cut the sandwich to whatever shape you wish.
- have with veggie cut crisps/chips (parsnip, beetroot etc) for an exciting crunchy companion
- great for lunch with a cup of hot tea or ice tea.
