Gourmet Tuna Noodle Casserole

- 1 medium onion, finely chopped shopping list
- 4 1/2 T unsalted butter, divided shopping list
- 10 oz. mushrooms, trimmed and sliced (4 C) shopping list
- 2 t soy sauce shopping list
- 1/4 cooking sherry shopping list
- 1/4 C flour shopping list
- 2 C low sodium chicken broth shopping list
- 1 C whole milk shopping list
- 2 t lemon juice shopping list
- 1/4 t salt shopping list
- 2 6-ounce cans tuna (any) drained shopping list
- 2-3 C small shell pasta shopping list
- 1 C grated sharp cheddar cheese shopping list
- 2 quart shallow baking dish shopping list
- 2 Large heavy frying pans shopping list
- Pot to par-boil pasta shopping list
How to make it
- Place oven rack in middle position. Grease or spray with Pam a shallow baking dish.
- Saute onion in 1 1/2 T butter with a pinch of salt in a large, heavy skillet over moderately low heat, stirring occasionaly, 5 minutes.
- Increase heat to moderately high and add mushrooms. Stir until mushrooms give off liquid, about 2 minutes.
- Add soy sauce and stir until mushroom liquid is evaporated.
- Add sherry and bring to a boil, stirring occasionaly, until evaporated. Remove from heat.
- Melt remaining 3 T butter in another skillet, over moderately high heat and whisk in flour, 3 minutes.
- Add chicken broth in a slow stream, whisking. Bring to a boil.
- Whisk in milk and simmer sauce, whisking occasionally, 5 minutes.
- Stir in mushroom mixture, lemon juice, and salt. Flake canned tuna into sauce and mix well.
- Add shredded cheddar to sauce; mix well.
- Preheat oven to 375.
- Cook pasta until just al dente, drain, and pour into casserole dish. Pour sauce over pasta, stirring gently, making sure all is evenly distributed.
- Bake for 20 to 30 minutes.

I don't think this is hard at all. It is real cooking. It just needs some time. Delicious sounding recipe.
