Italian Porkette in Crockpot

- 2 (4 lb) boneless pork butt (did not like one with bone in it) shopping list
- Rub: shopping list
- 2 tbsp fennel seed shopping list
- 1 tbsp onion powder shopping list
- 1 tbsp garlic powder shopping list
- 2 tsp black pepper shopping list
- 1 tbsp italian seasoning shopping list
- 1 tsp oregano shopping list
- 1/2 tsp red pepper flakes shopping list
- 1/2 tsp dried rosemary shopping list
- 1 tsp kosher or sea salt shopping list
- 4 cloves garlic shopping list
- 6 cloves of sliced garlic shopping list
- At least 6 tbsp olive oil shopping list
- 3 lbs potatoes shopping list
- 8 carrotts, sliced into 3/4" slices shopping list
- salt & pepper shopping list
- 1 tsp thyme shopping list
- 1 cup of vegetable broth shopping list
- 1 tsp Pesto Paste shopping list
- 1 tsp garlic powder shopping list
- Gravy: shopping list
- cornstarch or tapicoa starch shopping list
- 8 shopping list
How to make it
- In a zip lock bag, add rub ingredients, close bag and pound until powdery and if you want pasty.
- Cut meat open like a book, horizontally,
- Make slits in meat and stuff garlic slices into them
- Drizzle olive oil over meat and coat with rub mixture and then rub into meat a little,
- Close meat and tie with cooking twine
- Make slit on top, side and underneath and stuff more garlic slices
- Drizzle all outside with olive oil
- Rub more rub mixture over meat (don't be light handed)
- Put meat in crock pot
- Cut carrots and potatoes (cubed into quarters) (Do not use a quick cook potatoe as they will fall apart)
- Place carrots and potatoes around meat
- Optional: 1-2 large onions sliced
- Drizzle olive oil around carrots & potatoes
- Season with salt, pepper, paprika, thyme, garlic
- In mixing bowl mix broth, paste & garlic powder to well blended,
- pour over meat
- Cover, cook at high for 3 hours
- Lower to low for 2-3 hours more
- Remove meat, veggies & potatoes
- Pour juice into sauce pan, skim off fat
- Take about 1-2 cups out and mix with cornstarch or tapicoa starch,
- Slowly whisk back into sauce pan, and stir till boiling & thick
- If too thick, add some milk or water till desired consistency
