Chorizo Chilli Con Carne

- 500g lean steak mince shopping list
- 2 onions, very finely diced shopping list
- 3 cloves garlic, crushed shopping list
- 1 green bell pepper, finely diced shopping list
- 1 green chilli, finely diced (optional) shopping list
- 150g cooking chorizo, 1cm cubes shopping list
- 1 tsp freshly ground cumin shopping list
- 1/2 tsp paprika shopping list
- 1 stick cinamon shopping list
- 1 bay leaf shopping list
- 1 tsp chilli powder shopping list
- 1 tsp chilli flakes shopping list
- 1/2 tsp dried oregano shopping list
- 2 400g tinned chopped tomatoes shopping list
- 1 tin red kidney beans shopping list
- 2 tbs tomato puree shopping list
- 200ml beef stock shopping list
How to make it
- Brown the meat in batches in a hot pan
- In a separate pan fry the finely diced onion in some oil
- Add the garlic, green bell pepper, green chilli pepper (optional) and chorizo and cook for 3-4 minutes
- Add the cumin, cinnamon, bay leaf, chilli powder, paprika, and oregano. Cook for 1-2 minutes
- Add the meat, tinned tomatoes, beans, puree, and stock
- Cover and cook on a medium heat for at least 60 minutes
- Towards the end of cooking, check for seasoning and chilli heat. Add more chilli powder if necessary
- Serve with rice
