Corn Casserole

- 1 can corn, undrained shopping list
- OR one can creamed corn shopping list
- 2 eggs, well beaten shopping list
- 1/2 cup milk or soy milk OR half and half shopping list
- 1/3 cup sugar or Splenda shopping list
- 2/3 cup plain dried bread crumbs shopping list
- 2/3 cup finely cut cheese (cheddar, monteray jack, etc.) shopping list
- salt and pepper to taste shopping list
- OPTIONAL: shopping list
- 1 pimento cut finely shopping list
- 1 green pepper diced shopping list
How to make it
- Beat eggs in large bowl
- Mix all other ingredients into eggs
- Pour into 9x9 square baking dish (glass works best, but use what you have) that you have sprayed with PAM
- Bake at 350 for 30-40 minutes or until set and slightly browned.

I remember a relative making this for a holiday when I was a kid. As I read your ingredients I could picture us around the table again. Excellent comfort food and a lovely recipe to share with us.
