Penne With Salmon Basil And Lemon

- 4 pieces of salmon shopping list
- 4 garlic cloves (skin left on) shopping list
- juice of 2 lemons shopping list
- cracked black pepper shopping list
- 1 Tbsp Dijon mustard shopping list
- 4 Tbsp extra virgin olive oil shopping list
- 1 small punnet of cherry tomatoes (each sliced in half) shopping list
- 1 handful of baby spinach leaves shopping list
- 1 handful fresh basil leaves shopping list
- 300g dried penne pasta shopping list
- parmesan cheese to serve shopping list
How to make it
- 1) Heat oven to 200 degrees C
- 2) Place Salmon fillets onto the centre of a large piece of tin foil. Lift the sides of the foil up to form a boat. Pour the lemon juice over the fish and place the garlic cloves in between the fillets. Wrap the foil up so that the package is sealed.
- 3) Place in the oven and cook for 20mins.
- 4) While the Salmon is cooking start cooking the pasta. Drain when cooked and place back into the pot you cooked it in. Cover & set aside (keep warm).
- 5) Once the fish has cooked, remove Salmon fillets & set aside to keep warm. Squeeze the flesh out of the Garlic Cloves into a cup. Pour the juices from the fish parcel into the cup also. Add the mustard, pepper and Olive Oil to the juices and stir into a dressing.
- 6) Break the Salmon fillets into pieces into the pasta. Add tomatoes, spinach, basil, dressing and stir.
- 7) Serve with grated parmesan.
