Baked Chicken with Fennel and Apples

- 3-3-1/2 lbs. chicken parts shopping list
- 2 fennel buklbs,fronds removed,bulbs cut in 1" wedges shopping list
- 4 shallots,halved lengthwise shopping list
- 1/2 c fresh sage leaves shopping list
- 3 Tbs extra virgin olive oil shopping list
- 2 Tbs cider vinegar shopping list
- coarse salt and ground black pepper shopping list
- 2 Gala or Fugi apples,cored and quartered shopping list
How to make it
- Preheat oven to 450,with racks in upper and lower thirds. On two rimmed baking sheets,arrange chicken,fennel,shallots,and sage.
- In small bowl,whisk together oil and vinegar and drizzle over chicken and vegetables.
- Toss to combine and season with salt and pepper. Roast 35 mins,rotating sheets halfway through. Add apples to sheet and roast until fennel is browned and chicken cooked through,15-20 mins. more.
