Filipino Style Chicken Curry

- vegetable oil shopping list
- margarine shopping list
- 1/2 cup ginger and garlic paste shopping list
- 1/2 cup chopped shallots shopping list
- 3 red bell peppers sliced shopping list
- 6 red chilis, chopped shopping list
- 1/3 cup curry powder shopping list
- ground pepper (amount varies upon the cook) shopping list
- 1 kilo chicken cut into serving pieces shopping list
- 3 cups coconut milk shopping list
- 1 cup tomato paste shopping list
- fish sauce to taste (not salt) shopping list
- 5 potatoes diced shopping list
- 3 carrots diced shopping list
How to make it
- In a hot pan, put vegetable oil
- Then put margarine
- saute ginger and garlic paste
- then the chopped shallots and bell peppers
- saute very well; that's what Filipino dishes are known for
- Add chopped red chilis
- Add chicken, saute very well for 15 minutes
- Every 3 minutes, put a dash of curry powder in the pan as you saute the chicken
- Then put ground pepper to taste
- Throw in the potatoes and carrots
- Pour in the coconut milk and the tomato paste and leave it until the mixture reduces and turns into a yellowish-brown one
- Season the dish with fish sauce
- Boil for five more minutes or until the potatoes and carrots are done
