Chicken and Spinach Tortilla Bake

- 1 Tbs olive oil shopping list
- 4 chicken cutlets(about 1lb) shopping list
- salt and pepper shopping list
- 1-1/2 c store bought sasa verde shopping list
- 3/4 c ricotta cheese shopping list
- 4 lg. flour tortillas,cut in wedges shopping list
- 1/2 red onion,thinly sliced shopping list
- 3 c baby spinach (about 1/4 lb.) shopping list
- 2 c shredded pepper jack cheese shopping list
How to make it
- Preheat oven to 450 degrees. In large skillet,heat olive oil over med-high heat. Season the chicken with salt and pepper,add to the pan and cook,turning once,until cooked through,about 5 mins.
- Let cool and shred the meat.
- Whisk together the salsa verde and ricotta;season with salt and pepper.
- In a greased 9" square baking dish,layer 1/3 of salsa mixture,tortillas,chicken,onion,spinach and pepper jack;repeat twice. Bake until golden-brown,15 to 20 mins. Let stand for 10 mins before serving.
