Pork Lasagna With Three Cheeses

- 2 tablespoons olive oil shopping list
- 1 pound ground pork shopping list
- 1 large white onion finely chopped shopping list
- 1 red bell pepper finely chopped shopping list
- 3 garlic cloves minced shopping list
- 1 teaspoon cayenne pepper shopping list
- 2 cans diced tomatoes with herbs shopping list
- 1/4 teaspoon salt shopping list
- 1/4 teaspoon freshly ground black pepper shopping list
- 15 ounces ricotta cheese shopping list
- 3 cups shredded mozzarella cheese divided shopping list
- 1/2 cup grated parmesan cheese shopping list
- 1 egg shopping list
- 1 tablespoon dried parsley shopping list
- 1/2 pound lasagna noodles shopping list
How to make it
- Preheat oven to 350 then spray lasagna pan with nonstick cooking spray.
- Heat oil in large heavy skillet then add pork and cook 5 minutes stirring often.
- Add onion and bell pepper then cook 2 minutes.
- Add garlic and cayenne then cook 30 seconds and stir in tomatoes then bring to a boil.
- Reduce heat to medium low then simmer 20 minutes or until sauce has thickened.
- Stir in salt and pepper.
- In large bowl stir together ricotta, 2 cups of the mozzarella, parmesan, egg and parsley.
- Spread 1 cup of the tomato mixture over bottom of pan.
- Place 3 uncooked lasagna noodles side by side over sauce.
- Spread one third of the ricotta mixture over noodles then sprinkle with remaining mozzarella.
- Spoon one-half of the remaining tomato mixture over cheese then repeat layers.
- Place lasagna noodles in opposite direction with each layer and ending with mozzarella cheese.
- Cover and bake 35 minutes or until heated through and sauce is bubbling.
- Cool 10 minutes then serve while hot.
