Buttermilk Pie with Blueberry Topping

- 1/3 cup sugar shopping list
- 3 tablespoons all-purpose flour shopping list
- 1/2 teaspoon salt shopping list
- 1/4 teaspoon ground nutmeg shopping list
- 2 large eggs shopping list
- 1 large egg white shopping list
- 1 (14oz) can nonfat sweetened condensed milk shopping list
- 1 cup nonfat buttermilk shopping list
- 1 tablespoon lemon juice shopping list
- 1 teaspoon vanilla shopping list
- 1 frozen 9 inch deep dish pie shell shopping list
- TOPPING (recipe follows) shopping list
How to make it
- Heat oven to 325
- In a small bowl, stir together sugar, flour, salt and nutmeg
- Set aside
- In a large bowl, whisk together eggs and egg white
- Add condensed milk, buttermilk, lemon juice and vanilla, whisking thoroughly
- Whisk in the sugar mixture
- Pour filling into pie shell
- Bake for about 50 minutes, or until filling is set and top is lightly golden
- Cool until lukewarm, about 20 minutes
- Spread on Blueberry topping
- Serve warm, or cover with plastic wrap lightly coated with nonstick spray and refrigerate
- TOPPING
- In a small saucepan over low heat, stir 1 cup of blueberries until they start to become juice, about 2 minutes
- Add 1/4 cup sugar and stir until dissolved
- Increase heat to medium and let simmer, stirring occasionally, until thickened, about 4 minutes
- Remove from heat and stir in 1/2 teaspoon cinnamon and 2 cups of blueberries
- Cool until lukewarm
