How to make it

  • In a glass bowl combine all marinade ingredients and whisk briskly.
  • Pour the ingredients into plastic bag and add the steak.
  • Let steak marinate in the refrigerator for at least 4 hours or overnight.
  • In a food processor fitted with metal blade blend all the peppercorn butter ingredients.
  • Process until well blended then transfer to a piece of waxed paper and roll into 1" round tube.
  • Seal the ends by twisting the paper and chill covered at least 2 hours or overnight.
  • Allow to come to room temperature before preparing the meat for grilling.
  • Drain meat then pat it dry and press crushed peppercorns into it.
  • Allow meat to stand 20 minutes then season it with the sea salt.
  • Grill steak over glowing coals 5 minutes per side then transfer to cutting board.
  • Top with thin slices of peppercorn butter then let rest 5 minutes.
  • Cut steak into thin slices across grain on an angle and dot with more of the butter and serve.
