One of the toughest task I face as a cook in my family, is making sure I prepare balanced meals every day. If you have ever tried to make sure you follow the Vegetarian Pyramid to calculate the servings of different foods, you will know what I am talking about.  Though nowhere close to perfection that I strive for, I try my best to do justice with the means available to me on a day to day basis.

My collection of recipes from all resources are those that satisfy this need.  Among them is this gem of a meal. Wholegrain, Legumes, Vegetables, Dairy and other nutrient dense accompaniments makes this a winner for me. Its a wonderful combination of looks, flavor, ease and fulfillment.  Few shortcuts (like frozen veggies and leftover/storebought chapathi(s)) makes this even simpler and great for a weekday meal.  I find them perfect for lunchbox as well accompanied with kachumber.

  • Yields: Makes 6-8 Rolls
Ingredients
    For Dal Layer
  • 3/4 cup yellow Moong Dal
  • 1-2 Chillies, or as per taste
  • 1/2" Ginger, peeled and chopped
  • Salt, to taste
    For Vegetable layer:
  • 1 medium Onion, finely chopped
  • 1/2 cup mixed Vegetables, finely chopped (frozen works great)
  • 1 cup cubed Paneer or see Tips
  • 1-2 Green Chillis, finely chopped, or as per taste
  • 1 tsp Cumin - Coriander Powder
  • 1/4 tsp Turmeric Powder
  • Salt and Pepper to taste
  • Freshly squeezed Lemon Juice, to taste
    For the Rolls
  • 6-8 Chapathi(s)/Roti(s), store bought or leftovers
  • Abt 1/3 cup Sweet Chutney (Date and Tamarind)
  • Abt 1/3 cup Green Chutney (Mint and Cilantro)
Tips
1. Paneer: To make this Vegan, use Tofu instead.

2. Gluten Free: To make this Gluten Free, substitute Gluten Free/Brown Rice tortillas instead.
Method
1. Soak Moong Dal overnight.
2. Grind it with chillies, ginger and salt the next day.
3. Add just enough water to make it into a thick flowy batter. Set aside.
4. Now heat a pan and add some coconut oil. Saute the chopped onion until soft.
5. The vegetables go in next followed by paneer. If using fresh veggies, steam them first. I am using frozen, hence I cook them directly for few minutes before adding room temperature paneer. Cook for about 7-8 minutes with the lid on - or until the vegetables are soft.
6. Add the spices
7. give it a good mix until combined and cook for another 1-2 minutes for the flavors to fuse together. Squeeze some lemon juice and give it a mix.
8. Mash the veggies a bit. Taste and season more if needed.Set aside.
9. In the same pan (after removing veggies) or in another pan, lightly brushed with oil, pour out a ladle of moong batter.
10. Place a roti on top and press so that the dal mixture spreads to the edges of the roti under it.
11. Brush some ghee/oil on top of the roti and along the sides. A little goes a long way.
12. Lift to see if the dosa/moong dal mixture is cooked below. Or turn and check. Once done, remove the roti and keep aside.
13. With the dal side facing up, add some green chutney and spread it all over.
14. Repeat for Sweet Chutney.
15. Spoon some veggies on top of this
16. and roll it. Cut it into two halves and serve.

I've already made 2 recipes from your site today, so I must postpone this one...not too long I hope. All your recipes are so mouth watering ! I just wonder how to have soft chapathis if I make them in advance, so that I can roll them easily. I' m afraid my rolls won't taste and look as good as yours...
