Easter - and #2

these are just a few pics from our Easter festivities.
the hubbers was under the weather over the weekend so we actually haven't had our Easter egg hunt yet. there are eggs ALL OVER our house. the Easter Bunny sure did a good job this year. but we did find our Easter baskets and the chubbers went crazy!


we colored our eggs for the Egg Roll that we had with my side of the family. the chubbers waited patiently in his high chair while we named all our eggs. some of best names this year:
Troy's woman

the Komish Killer (spelled wrong on purpose)

my mom was so awesome and made this bunny cake for our Easter dinner. when we were kids she would make a cake just like this. and it's so yummy!

and - the chubbers got his 2nd tooth over the weekend. it's just barely peeking through - but it's there.

and - here is this week's recipe - from memory. i got this recipe out of the Mormon Essentials Celebrations cookbook (i think that's the title)

Creamy Pineapple Lime Jello or something
2 cups water
1 large package lime jello
2 tablespoons lime or lemon juice
1 can of crushed pineapple, undrained
1 8 oz block of cream cheese
1 cup whipping cream

boil the 2 cups water,
dissolve the jello in the 2 cups water and add lemon or lime juice
put in the fridge until its syrupey (is that a word???)

beat cream cheese until it is smooth
whip the whipping cream and sweeten with sugar
mix cream cheese and whip cream together
add pinepple and mix all together
mix that all in with the jello

put in a 9 x 13 pan and refrigerate

good stuff.
i'm having leftovers today for lunch - can't wait!

THE COOLEST - EVER!!!

well, if i haven't mentioned it before - i'll mention it again - I HAVE THE COOLEST SISTERS IN THE WORLD.

yesterday i got a package in the mail from my sister lu-lu who lives way over in Hawaii. and this white "thing" was one of the things inside the box. see if you can guess what it is (sorry the picture is kind of blurry - it looked o.k. when i took it)


now - before you scroll down to see what it is - think Easter.

while you're trying to guess - here are a few pics of the chubbers.


i guess he thinks we're going to pry his toys out of his death grip while he's sleeping. poor kid.


last night he was really excited to help me help him out of his clothes. this is what happened. poor kid - i just had to take a picture of it. for some reason - it really tickled my funny bone.

she knitted / crocheted this and sent it over for us to have. i LOVE it! it makes my heart smile every time i see it.
the chubbers couldn't figure it out - he was looking at it like - there are all these parts, but they all fit together. it was cute to watch him.

another raindy monday

you know, Karen Carpenter said it best when she sang the words "rainy days and mondays get me down"
but alas, i LOVE rainy days. certainly not mondays, but rainy days, yes.

so here is a little pick-me-up for you.
an oldie-but-goodie recipe from the age-old cookbook of my grandma's. i made this yesterday for our family dinner.
you see - i'm the jello queen for my in-laws. they LOVE jello. so every week for sunday dinner, i make jello.
i found this recipe and figured it had jello in it - so it counts.
and i'll be H - this didn't look so hot when i made it and put it in the fridge to chill. the hubbers was like - uhhhh.......what is that?
but he doesn't like angel food cake to begin with - so we were already batting zero. funny thing - we had strawberry shortcake for dessert after our dinner, so he got 2 helpings of angel food cake yesterday. lucky man.

hOOOOOOOOOO-ray!!!!!

what better way to celebrate the end of another semester than to post a few fantastic pics of the chubbers?!?!


here he is playing with his toys and drooling all over his shirt. yes, the toys are all on the floor, but that's o.k. he was entertained for at least 5 minutes.

the chubbers LOVES to play with the hubbers hat. don't know why - but he loves to take it off the hubber's head and look at it.


on a walk with grandma. apparently he had some energy to get out, so they went outside to watch grandpa fix sprinklers.

we took this pic last night of the chubbers while he was sleeping. i don't know why - but we thought he looked so funny while he was sleeping. so we took a picture.

sure do love this little guy!
and sure do love the end of a semester of school.

what a smell.

well, it's true.
sometimes things go really bad in my fridge.
i'm not proud to admit it because that means one, or more, of the following:
A - i don't know what's in my fridge
B - we're not working through the things in my fridge fast enough
C - there's too much in my fridge and we can't eat it all
D - i don't move enough things around to get to the very bottom of the drawers.

i found something last night - can't decide if it was a squash or green onions - in the bottom of my vegetable drawer in the fridge. it was gross. it was leaky. it had a lot of liquid in the plastic bag that i KNOW wasn't there when i put it in my fridge.
gross.

so.
please take a moment and go check your fridge for things that could be growing.
in the mean time, for those of us who have SPOTLESS fridges, here is this week's recipe - i'm trying this out tonight. i'll let you know how it tates.

Brownie (recipe from Baker’s) Ingredients:
4 ounces unsweetened chocolate
3/4 cup unsalted butter (1 1/2 sticks)
2 cups sugar
3 large eggs
1 teaspoon vanilla
1 cup all purpose flour

Cookie Dough (Adapted from the Blue-Eyed Bakers)
1 cup unsalted butter (2 sticks), softened
1/2 cup granulated sugar
1 cup light brown sugar, firmly packed
4 tablespoons milk (I use skim)
1 1/2 cups all purpose flour
1/4 tsp salt
2/3 cup chocolate chips
Directions:
Pre-heat oven to 350 degrees
Melt butter and chocolate in large sauce pan over low to medium heat
Stir in sugar
Stir in eggs and vanilla
Whisk in flour until smooth
Pour into a 9×13 pan lined with foil and greased or sprayed with cooking spray
Bake for ~30 minutes or until knife comes out clean

Cookie Dough
Beat butter and sugar until fluffy
Mix in milk
Gradually mix in flour and salt
Stir in chocolate chips
Allow brownies to cool completely (might be easier if they are frozen) and then spread cookie dough over the top
Store in refrigerator (or freeze)

phew.

it's been a long, busy, tiring week at our house.
finals are this week for me at school.
my brain is fried.
just as the hubbers. i'm pretty much a zombie.
and we've had the sickies again.
the chubbers is feeling better now - but it's been a week of stuffiness.

so - moving on!
here is this week's recipe, a little late, but worth it.
we made this for dinner on monday and it was fantastic!

Baked Lemon Pasta – from the Sister’s Cafe

1 pound Thin Spaghetti
4 Tablespoons Salted Butter
2 Tablespoons Olive Oil
2 cloves Garlic, Minced
1 whole Lemon, Juiced And Zested
2 cups Sour Cream
½ teaspoons Kosher Salt, Or More To Taste
Plenty Of Grated Parmesan Cheese
Flat-leaf Parsley, Chopped
Extra Lemon Juice

Preheat oven to 375 degrees. Cook spaghetti until al dente. In a skillet, melt butter with olive oil over LOW HEAT. When butter is melted, add minced garlic. Squeeze lemon juice into the pan. Turn off heat. Add sour cream and stir mixture together. Add lemon zest and salt. Taste, then add more salt if necessary. Pour mixture over drained spaghetti and stir together, then pour spaghetti into an oven safe dish. Bake, covered, for 15 minutes. Then remove foil and bake for an additional 7 to 10 minutes. (Don’t bake too long or the pasta will dry out.) When you remove it from the oven, squeeze a little more lemon juice over the top. Top generously with Parmesan cheese, then chopped parsley. Give it a final squeeze of lemon juice at the end or feel free to add as much as you like.

**the only thing i would change on this recipe is - add more pasta. the sauce is a little strong and we didn't use enough pasta. it would have been 10 times better if there was more pasta.
**also - we added some broiled chicken to it. it was so yummy. we cooked the chicken and added some lemon juice while it was cooking.
a great spring recipe!
