A few things

First, I went yesterday and registered Abi for kindergarten. KINDERGARTEN! I can't believe she's that old already! My little girl is growing up way too fast!

And second, I just have to say that I love the D.I.! Well lately anyway, not always. But I've found a lot of great things lately! The other day Josh came home with a picture of a roll top desk. I've wanted one of those for a very long time. It's not one of the big ones (though I would love if it were) but it's perfect. Anyway, he showed me the pictures and I promptly sent him back to the D.I. to get it. The sticker on it said $50 but he managed to get $10 off. It just needed to be cleaned and have the legs tightened a bit. Now where to put it...

A First for Everything...

Last night Josh and I went up to Wolf Mountain with Heidi and Mike (my sister and her fiance) to go snowboarding for the very first time! Woo Hoo! It was great! When we got there we went over to the little practice hill. Josh got up and just took off, but didn't get too far before he fell and did something to his elbow. Good sport that he is though he just got up and went again. No help! Me on the other hand, I was too afraid to let go of Mike's hands. We didn't get too far before Mike decided that it wasn't all that great of a hill to work on so we went and got in line for the lift. I was a bit nervous seeing as though I'm HORRIFIED OF HEIGHTS, but it turned out not to be so bad. The hardest part was trying to get off. That was great entertainment for all who saw it. The first time down Mike held on to my hands and we both fell several times. He has so much patience. It litterally took forever to get down that hill. Poor Mike had to go backward all the way down and by the time we got down his calves were hurting him. The next time down I took a bit of a break and decided to wait at the bottom and take a video of Josh coming down. Then we went up again. This time Mike helped me get started and went down the hill a little and then let go. About this point was when Josh looked back at us and said "I want to try going backward" and he turned around and then promplty fell! It was hillarious! I busted up laughing and as a result fell myself. I was still having problems getting up after falling so whenever I fell Mike had to come help me up. Then the last time down the hill I finally figured out how to get myself up and I only fell twice! Well actually I like how Mike put it that I just stopped to rest. I had so much fun! It's definitely something we will do again! Thanks Heidi and Mike for taking us with you and thanks Mike for having the patience to teach me! You guys are awesome! What I've been doing

I've always loved old things. And I've always wanted some type of trunk that I could use as a coffee table and store all of my blankets in. So imagine my excitement when I found a combination of those two things one day at the DI. Now, there are many times I go to the DI and walk out empty handed. I half expected that on the day I found my trunk. I don't even remember what we went there for to begin with. All I remember is walking in to the room they have all of the outdoor stuff, and exercise equipment in and seeing the trunk sitting there on the floor. I remember stopping to look at and telling Josh "That's the type of trunk I want." And the price tag said $25! Anyway, I pushed it to the back of my mind and we kept walking.
Funny thing happened on this trip too. At one point I turned around to look at Abi who was walking just behind me and she had something in her hand. It was money. I looked at it and saw that it was a 50 dollar bill! Now how does a 4 year old get a $50 you ask? I thought the same thing so I asked "Where did you get that?" to which she replied "I found it on the floor." WHAT! It so happened that a lady sitting near by heard the conversation and kindly pointed me in the direction of who she thought the owner was. Now how would you go about asking some random person if the cash your daughter found on the floor is theirs. Anyone would give a excited "YES it's mine" don't you think? So I approached the girl and held the money in my hand a little crumpled so you couldn't tell it was a $5o. And politely asked "Did you loose some money?" She started feeling around her pockets as I explained the story. And then she turned and asked "is that a $50?" So I said yes and she said it was hers. How crazy is that?
So now back to my story of the trunk. We continued walking around the DI looking for any other "treasures" we might be able to take home and I just couldn't get that trunk out of my head. So when we were finished I told Josh I wanted to go back and look at it one more time. So we went back to look at it. We discussed it and opened the lid finding that one of the hinges was broken. Josh then told me that he wasn't sure it was worth it to get it and try to refinish it. I told him I would still like to try and "couldn't his dad help with it?" So he finally went to get a worker to write up a slip so we could pay for it and Josh could come back with the truck later. I was so excited.
We figured out later that it's an old artillery trunk, with worn "army green paint" and everything.
So that's what we've been working on. It is currently in his dad's garage up in Bountiful and we make 1-2 trips a week up there to sand it down and put polyurethane on it. I can't wait til it's finished and I can get it home and find the perfect spot for it!

Yummy Honey Glazed Pork Chop Recipe

This is my new favorite recipe. It's so yummy. I have tried it on chicken as well and the only difference is that you have to cook the chicken longer. I also turned the heat on the oven up to about 400.

Honey Glazed Pork Chops

  • 2 lbs of boneless pork chops
  • 1/3 cup flour
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 5 TB butter
  • 1/3 cup honey
  • 1/4 cup brown sugar
  • 1/4 c. soy sauce
  • 1/3 c. lemon juice
  • 1 tsp. ground ginger
  • Cayenne Pepper to taste-depending on how spicy you like it

Heat oven to 350. In a shallow dish combine the flour, garlic powder and salt & pepper. Dip each pork chop in flour mixture and coat evenly.Melt 2 TB butter in a shallow baking dish, large enough to accommodate pork in a single layer. Arrange pork chops in pan and bake uncovered for 15-20 minutes (depending on how thick your pork chops are) at 350 degrees. Don’t over cook or pork will get tough.

Meanwhile, in a small saucepan, melt remaining butter and add honey, lemon juice, brown sugar, soy sauce, ginger and cayenne pepper. Boil for several minutes until sauce begins to thicken.After pork chops have baked for 15-20 minutes, turn each piece over and pour sauce mixture evenly over pork. Bake another 20 to 30 minutes, or until cooked through. Serve over rice. This recipe is also great on chicken.
