Butternut Squash Lasagna
Butternut Squash Lasagna -- a healthy "lasagna" made from layers of butternut squash! This dish was inspired by a recipe my sister-in-law sent me from her local newspaper. I made it nutritarian and vegan by leaving out the oil, salt, and cheese.

Butternut Squash Soup
From Lipstick & Granola: "Butternut squash soup! This is such a rich, creamy, and HEALTHY soup! You would never guess that it's just a pot of blended vegetables! It's totally vegan, and the only fat is a couple of tablespoons of olive oil to saute at the beginning. It was exactly what I needed to warm up on this typical upstate NY winter day. Spaghetti Squash with Eggplant Marinara

Butternut Squash Fries
Here is a submission from Christie Haigh at Haigh Happenings, who writes: "Here is one of my favorites- butternut squash fries. This is a healthy addition to any meal- low in calories and high in fiber. It is a source of all kinds of good things like vitamin C, manganese, magnesium, and potassium, and vitamin A. I like to bulk up my meal with these.
"Here is a picture after I cut it up, cut the skin off, and put it in the pan. I sprayed it with cooking spray, sprinkled cumin and kosher salt on it:
"The great thing is that 2 of my 3 kids also like to eat them. Aliah digging in:

"Ricky is still dubious, he tried one today for I think the second time. That's progress- it only took me 7 years to get him to eat broccoli."

PIZZA WEEK: Butternut Squash Pizza
Bonniejean says, "Thinly sliced butternut squash, sage and walnut pizza on a wholegrain crust! (There is some gruyere cheese on it, but I'm sure it would be
