Butternut Squash Lasagna


Butternut Squash Lasagna -- a healthy "lasagna" made from layers of butternut squash! This dish was inspired by a recipe my sister-in-law sent me from her local newspaper. I made it nutritarian and vegan by leaving out the oil, salt, and cheese.

Vegan Hors D'Oeuvres


Nikki writes, "The photo I am submitting is one of my latest and greatest recipes, and it is a tasty little hors d'oeuvre with avocados, tomatoes, fresh mint, spices, vegan 'Monterrey Jack cheese', all on freshly baked whole wheat baguette. SO delicious. I took them into work for all my meat-loving coworkers who loved them and wanted to steal my recipe!"

Super Chunky Vegetable Sauce

Laura wrote in a while back, "We’re moving in two weeks, and we’re on a mission to use up what we have, without buying more, so that we won’t have to move food. This makes it a challenge sometimes to come up with a healthy meal, because you end up with a lot of odds and ends that don’t really go together. Today I put together the rest of our vegetables into a chunky healthy sauce, full of onions, garlic, zucchini, artichoke hearts, and tomatoes. It was colorful, flavorful, healthy, and oh so good served over a bit of Israeli couscous."

Sprout Salad


Laura writes, "I keep a never-ending jar of mixed sprouts (quinoa, red lentils, brown lentils, mung beans, chick peas) going pretty much all the time. It makes it so easy to make a healthy and filling lunch. This particular salad had a bit of red cabbage, a few spoons of left over Israeli couscous, and half of a chopped tomato. I topped it with a spritz of olive oil and a few shakes of balsamic vinegar. Yum!"

Vegan Tomato Mozzarella Caprese


Katherine sent in this submission of "a vegan spin on a classic summer dish: tomato mozzarella caprese. In the picture is fresh-picked basil from my herb garden and tomatoes from the farmer’s market, along with "Buffalo Mostarella" from Jo Stepaniak’s The Ultimate Uncheese Cookbook.

"Everything is dusted with salt and pepper and drizzled with a little balsamic vinegar. It was delicious! I love the "cheez" swaps in Jo’s book!"

Gazpacho


Janna at Viva Sustainable sent in pictures of her healthy, cool summertime meal: delicious gazpacho made from ingredients she found at Trader Joe's in Manhattan.
  • Heirloom tomatoes (red, green and yellow)
  • On the vine tomatoes
  • "Garden Patch" veg juice (Trader Joe's brand)
  • Annie's vegan Worcestershire sauce
  • Red wine vinegar
  • Cucumber (seeds removed)
  • Yellow and orange bell peppers
  • Frank's Red Hot
  • Fresh chopped garlic
  • Red onion
  • Chopped parsley
  • Lemon juice
  • Cumin
  • Cayenne Pepper
Janna says, "I made a ton of it and it's lasted me for a week and it tastes better and better every day! Perfect summer meal with some lightly salted pita chips. Gazpacho is great because you can make it your own, mix and match how you want and do it however you like it to taste! So easy."

Something Quick and Easy


Short on time? Here's a great dinner suggestion from Suzi: "Here is my healthy dinner from last night -- we needed something that was quick and easy! It's baby portabella mushrooms, garlic, fresh tomatoes, sundried tomatoes, cannellini beans, toasted pine nuts, spinach and oregano all sauteed in broth and served on a bed of brown rice spiral pasta. I topped mine with a little nutritional yeast."
