It's officially spring!! I can't even convey how incredibly excited I am that winter is FINALLY over! After being sick and cooped up for like three months straight, I'm so excited to see the sun and just be outside. My girls are pretty stoked about the nicer weather too. They were outside at the park for like 4 hours straight yesterday! Can't say I didn't enjoy the nice quiet afternoon, it was great.
This week's menu is full of quick and easy favorites. I'm continuing to gather crock pot recipes for my Sunday dinners and this week's looks great.

Menu Plan Monday
I know menu planning is kind of hit and miss here on the blog, but that's how we roll these days. There are some times I'm super organized early in the week and other times we just fly by the seat of our pants. Hopefully this will be one of the weeks I'm more rather than less organized. Everything just runs smoother when mom is organized.
As always, I've got some new recipes and some beloved oldie favorites. I have to say, I'm really looking forward to Tuesday's dinner: Marsala Chicken and Barley Stew and biscuits. Mmmm, my mouth is already watering!! I've actually also made myself a lunch and breakfast menu so I can make sure to use up what I've got this week. I'll list a few of those at the bottom.

Menu Plan Monday
I don't know if I even dare make a menu for this week! I've been living off of smoothies the past couple of days because I am sick yet again. This is getting pretty old...being sick, not drinking smoothies. I still love my smoothies! This is one of the huge reasons I don't enjoy winter though. I don't even mind the cold so much or the snow, but I haven't even been able to go out and play in it with my kids!! I did finally break down and bundle up to take my 2 year old on a walk today. It was 19 degrees but we stayed warm and the sun was welcome! I'll have to do that more this week. Need that vitamin D.

Menu Plan Monday Week 49 (2013)
Oh man it's been a while since I got a menu put together and actually posted it!! I've been flying by the seat of my pants when it comes to cooking dinner the past few months. Mostly because I was tired of my kids not eating much of what I was making and I just didn't want the struggle. Now, they seem to be coming around (kids do that every once in a while), at least for the time being, so I'm getting organized in the kitchen again. Let's make this work!!

Menu Plan Monday Week 37 (2013)
Oops, it's been a few weeks since I last posted a menu plan. I've gotten a local CSA basket a few times recently and I've been trying to work with that kind of on the fly...not so sure that's working out the best for me. I think I work better when I plan for what I'm going to buy so I make sure I'll use it all up. We got a TON of anaheim peppers last week and I'm still trying to figure out what to do with them, other than salsa, cause their kind of hot and I'm sure too hot for my kiddos.
Anyway, fall is definitely in the air!! I'm totally loving it. We've had rain and cooler temps the past couple of days and it makes me want all things soup and baked goodies and anything with pumpkin. I don't know about you but my fall food pinterest board is ever growing and I can't wait to start tackling it.
For this week though, I'm going to hold onto summer just a tad bit longer. I still have a bunch of garden produce I need to use up and lots of salsa to make. I am hoping to throw a couple more peach recipes at you this week as well. So, here's the quick and dirty....

Menu Plan Monday Week 26 (2013)
This summer has been a blast!! We've been living it up and haven't had this much fun in a long time. Sure we've had lots of late nights but it's only officially been summer for like two days so we still have plenty of time to play.
I guess it's been just over a month that we put our garden in but it seems a lot longer than that. I'm still waiting for the day that I can pick my first ripe tomato and ear of corn of the season. Every time I go out to see my plants I look at them and just will them to grow. Produce stands and farmer's markets aren't really in full swing yet either and I'm just dying to get my hands on some fresh local produce. Patience, I guess.
Anyway, still trying to clean out the fridge, freezer and pantry so menu items this week are mostly stuff I already have and need to use up before I go shopping again. Enjoy.

Menu Plan Monday Week 21 (2013)
If you read the menu post last week, you'll know that I celebrated my birthday last week. It was fun and wonderful and I had chocolate cake coming out my ears, especially since my mom sent us home with some on Sunday after a Mother's Day dinner. BUT, that didn't keep us from eating it. It was all delicious. I can't wait to share with you the cake I made for my birthday. A little time intensive, but WELL worth it!

Menu Plan Monday Week 20 (2013)
I hope everyone had a happy mother's day yesterday. We were busy celebrating with my mom so I didn't have time yesterday to get this week's menu up. Luckily I had been thinking of some things already so all I had to do this morning was jot them down. I actually had a couple leftover meal ideas from last week. Since we spent a couple long days putting in our garden, dinner got pushed aside and they were kind of fend for yourself nights...unfortunately. Menu Plan Monday Week 18 (2013)
Wow, I just checked back on last week's menu and I can't believe I got through all of it! That's pretty much a miracle around here. I'm going to quick throw this up while everyone is still sleeping around here (Sunday afternoon naps are sacred around here), so I can still have some peace and quiet.
So, I think almost everything on the menu is a repeat this week. I have stuff I need to use up AND I'm starting a 30 Day Love Your Greens Challenge so I want to keep things simple. Speaking of simple, I have a new mantra; SIMPLIFY. I'm trying to apply it to all areas of my life and hopefully my kitchen and my meals will reflect it.

Menu Plan Monday Week 14 (2013)
Ok, time to get back to menu planning. I took the past few weeks off not only because we have been sick but also to clean out my fridge! I've been trying to buy as little as possible to get through the week so I can empty out my fridge and get it cleaned up before stocking it once again. We're down to the bare bones now, just a few fruits in my fruit bowl and a few leftover veggies from our family Easter dinner last night. I've made my grocery list and menu, now to get it cleaned before I have to go shopping this afternoon.
There are only about two times year that I buy ham. Now is one of those times; Christmas it the other. I don't buy ham for Easter dinner, since we usually eat with family, but I love to have it for some of our favorite meals. One of them is on this week's menu, Penne Pasta with Smoked Ham and Pepper Cream Sauce. If you haven't tried it, DO, you'll love it. Some more favorites are Split Pea Soup with Smoked Ham and Kale, and Ham and Swiss Sliders.

Menu Plan Monday Week 11 (2013)
Well, I debated posting my weekly menu this week. My kids have been sick and still aren't better. That means their meager appetites are probably going to continue for a while yet and they won't be eating anything I would make, that's for sure. They'll probably live off toast and ice water for another couple days, so I guess I could be off the hook. But I don't want to be eating just bread and water so I'll be keeping it simple for us all around. The menu will just be in list form this week, in no particular order, and I've thrown in a couple extras for lunches and such.

Menu Plan Monday (2013 Week 7)
I'm so proud of myself! I stuck to the menu pretty faithfully this week and made just about everything, even the new stuff! Let me tell you, they were some good eats!! Unfortunately, about three of them were eaten too fast to photograph. That just means we'll have to repeat them...and soon!! Do look forward to the Lentil Veggieballs with Lemon Pesto, Chocolate Dipped Orange Shortbread Cookies, and Grapefruit Salad.
This week's menu is mostly new items as well, but they are pretty low on the difficulty scale so I won't be sucked into the kitchen all day (which is what it seems like sometimes). I do love to cook but still have to keep up with 3 spunky girls and LOTS of DRAMA around here on a daily basis. I even kept our Valentine's Day menu pretty simple with a quick and easy shrimp dish that we LOVE! I don't know about you but I always crave 3 things on Valentine's Day; seafood, pasta and, of course, CHOCOLATE!

Menu Plan Monday (2013 Week 6)
Wow, I can't believe I got through the majority of our menu last week. I don't know about you but it seems like just about everybody and their family has been sick for what seems like the whole winter so far; us included. I do have to say that I feel lucky that, although we have been sick, we definitely don't have it as bad as others. Thankfully, ours has been pretty mild.
A lot of times when someone in the family is sick, I just bag the menu for the night and just go with something easy or something they'll eat. I'm not the only one who does that right? So, as my children are getting their appetites back, I just decided not to veer too far from what was planned and just have them eat it...take it or leave it is mostly how it goes in our house. Anyway, to my surprise, they did try some new things I made so I'm proud of them for that. I feel like we're moving forward again. Now, if we could all just get better and stay healthy at the same time, that would be great.
This week I have some yummy meals planned! I also get to cook for my little sister a few times, so I'm super excited to have someone not often found at our dinner table, who also has a willing palate to lend to my culinary adventures! Thanks sis!!!
I don't have a whole lot of repeaters this week, thanks to PINTEREST. I'm trying to get through all the things I've pinned lately so we're trying lots of new things.

Menu Plan Monday (2013 Week 5)
Ahhh, I know this is going up late. I haven't had much time to really sit down and think about the menu for this week. Last week we ended up having kind of a down week in terms of meals. My kids have had NO appetite, been super picky eaters and my husband has been sick so I haven't wanted to make full-on meals for just me. Needless to say, my fridge is still pretty stocked from my shopping trip to the grocery store last week.

Menu Plan Monday (2013 Week 4)
Ok, time to get back to real life!! It's taken me weeks to recoup from the holidays. We were super busy and I didn't even want to think about cooking or menu planning or anything that took brain power for that matter! But, I've come to realize over the past few weeks that we haven't had a planned out menu that our meals are significantly lacking...in just about everything; veggies, fruit, greens, even taste..
So, it's back to the menu board for me. I'm excited to get my routine back and start cooking new things again. I'll still be easing my way back into posting regularly, but I'll have this week's menu up and at least one more post on its way.

December Menu 2012 (Week 2)
Woohoo, it's the holiday season and I am loving it! I don't think my waistline is loving it so much though. So many sweets!! Last year I had an excuse to eat and eat since I had just had a baby. This year, sadly, I don't. But how can you go through the holiday season without indulging even just a little bit? Some of my favorite holiday treats are my mom's caramels and fudge. But, I also like to stray from the norm as well and make new desserts as well, like this Egg Nog Gingerbreaed Trifle (a huge favorite!!).
I'm trying to balance out all the sweets (from parties, friends and neighbors) with lots of salad and veggies and wholesome main dishes. My kids are being quite picky eaters as of late, so they have been having hot cereal for dinner quite often. But, my husband and I still get to enjoy the yumminess.

December Menu 2012 (Week 1)
Ahhhh! It's already December. Where did the time go? I love this time of year but it's such a whirlwind for our family. We have a birthday and Thanksgiving in November, a birthday and Christmas in December and then New Years and a birthday just days after in January!!! We do a whole lot of celebrating during these months, but it's lots of fun and we get to see family more than we usually do.
Trader Joe's opened up their first location here in Utah last weekend and my friend and I took a girls day and headed up there to check it out. I was so excited to go. I had to go down every aisle, I didn't want to miss a thing! One of my favorite things I bought was a black bean and quinoa corn chip. They were delicious and pretty healthy; not a lot of ingredients or additives. I think I may try making them on my own. Homemade crackers/chips, why not? I also grabbed some tomato-basil hummus to go with it--YUM! Two other favorite things I picked up were some portabello ravioli and some gorgonzola....mmmm gonna try and recreate a fancy dinner with the hubs from our pre-kid era. Of course, I picked up some more apple cider for more of these pancakes, as well as some brussels sprouts, still on the stalk!! How cool is that? Well, maybe not for you but you don't see that much around here. I can't wait to share with you all that I'll be making from this weeks spoils! Stay tuned...

November Menu 2012 (Week 4)
Wow, I can't believe Thanksgiving has come and gone and it's already the last week in November. Are you still eating leftovers? I've still got a few leftovers but that won't last much longer. Mmm, that's my favorite part about the Thanksgiving meal.

November Menu 2012 (Week 1)
My goal for this week's menu is to not have to go shopping! Now, I know it is almost inevitable that I WILL go, but I want to go for as little as possible. I still have a bunch of produce leftover from my CSA basket from last week and I have a lot of bulk items in my pantry that I seem to accmulate, like lentils, dry beans and split peas and pastas. I want to use them up before I stock up again soon. We're also going to be away from home a couple nights this week and will be either eating out or having leftovers. So, here's to a creative menu this week for using what I've got.

Menu Plan Monday October 2012
Well, this week we're playing catch-up. On top of having a sinus infection, we had a flood a few weeks ago. Worst day ever waking up to water dripping everywhere! But, the repairs have finally been finished! No more laundry room taking over my baby's room, bathroom taking over my bedroom and construction crew coming in and out of my house all day. I'm happy to have my house put back together.
Although the house is back to normal I'm still trying to kick the sinus stuff. It's being very stubborn and has left me exhausted. So, this week I'm trying to keep it simple. Cook once, eat twice, have leftovers and quick and easy will be my go to words this week.
