Our Second Christmas ~> 2011

I'm flabbergasted by the fact that the 17th day of January is pretty much past us.  This month is already flying by and the realization of Seth's graduation is starting to become a reality.  We have about four months left until Seth's potential defend and graduation, yet he has sooo much to pack in it may actually take six-seven months.  Seth's survey was sent out while we were in South Carolina for Christmas break!  Now we are just waiting on the replies so he can then analyze all the data.  Things are moving along and he is working hard to keep things in motion!

Backtracking to our 2011 Christmas.  Our second Christmas as a Married Unit was just wonderful!  Thankfully, we were able to spend Christmas with our families and friends in South Carolina.  Unfortunately we both got so wrapped up in spending time with everyone that our camera didn't get thought very often :(.  I didn't get to capture a lot of moments that I wanted to, so what I did catch will just have to do.  

Now I am definitely a planner to the core.  Sometimes I may try to be spontaneous and go with the flow, but it is very difficult for me to do that and our Christmas vacation to SC definitely couldn't be spontaneous.  I wouldn't be content until everything was planned down to the second.  I mean we haven't seen our folks for about five and a half months or so and everything had to be equaled out amongst everyone----right?

We landed around midnight in Greenville and hugged those Sineath necks :).  We stayed the first few nights with them and tried to shed some lbs off of the Troupster.  He is HUUUUGE!

Anywho-he remembered his mommy and loved having me around.  He whined for my kisses and cuddled with me the whole time we were home :).

We spent a few days with Seth's family-including Christmas Eve and Christmas Morning.  We shot Skeet's at a Friend of Seth's and enjoyed time outside.

It has become a tradition with The Cook's to have Christmas NerfGun fights.  I was lucky enough to get involved with this tradition last Christmas when I married into the family.  I didn't realize what I was getting myself into :).  These innocent-good loving folks become evil when it boils down to these NerfGun wars.

Christmas Morning at South Main.

After spending Christmas morning at Seth's parents and going to church at South Main we ran off to Union to spend Christmas afternoon with my extended family.

After spending most of the afternoon in Union with my lovely family we went to my parents and opened our gifts with my family.

Ever since I can remember my parents have opened their gifts to each other on Christmas Eve.  I love watching them open their gifts to each other and it is just a little time for our family to finally focus on the two of them (since the entire year they focus on Eason and I).  Both my parents are very thoughtful and intentional with their gifts and the order they allow the other to open them :).  I HATED to miss this time with them on Christmas Eve and luckily/thankfully my parents changed their tradition to include Seth and I :).

During our visit we were able to have Christmas with Seth's extended family in Camden and had time to visit with Mrs. Cynthia's and Mr. Jimmy's family.

Seth and I were able to visit with his buddies Jay, Tanner, and Alex one evening.  We got to see Joseph and Laurie, my lovely engaged friend Ashley, my old neighbor/walking buddy Courtney, and one of my all time best buds Sarah while we were home!  So thankful for all of our friends that made the time to come and visit with us while we were in SC.

We had such a good visit with family and friends while we were in South Carolina!  We were spoiled by both of our families and got soooo many wonderful gifts!  We absolutely loved being in this South.

Although, we enjoyed the south we were both ready to get back home and back in the swing/routine of things.  We returned to Utah with warm weather and no snow on the ground :).  Now it is starting to turn colder and Seth and I are starting to crave snow and the activities that correlate with it!

2012

..2012..

~Wow 2012 Means~
~>I am going to be a quarter of a century  OLD this year..Unbelievable
~>Seth and I will have been 'together' a whopping five years-That includes those dating years, 4 months of engagement, and our married moments..
~>Seth will be graduating this year with a Master's Degree.  Six pain staking years of edumacation.  I know the poor fella is ready to be done!..
~>Working on our Second Year of Utah living and Marital Bliss--(Yes it is still in the marital bliss stage)..

Seth and I spent most of our final 2011 moments at a friend's playing a board game-Cities and Knights (which is part of the Settler's of Catan Game-we're definitely addicted to this game!).  Obviously, we are wayyyyy past our college days!  


Even though I hate to admit this--Seth and I stayed up until about 12:05 AM-gave each other a smooch for our first of many 2012 smooches (I know, I know-too much info) and went straight to sleep.

After Church we were close to heading home to whip up some Chicken Pot Pie.  

Yes-I did say Chicken Pot Pie.

Yes-I will admit that we forgot all about a New Year's Dinner when we planned our weekly menu.

Yes-we did realize even though we are Utah resident's, we are still Southerner's at heart.  And Chicken Pot Pie just wasn't going to cut it.

Yes-Our menu was quickly changed into a full Southern New Year's Day Dinner and off to the grocery store we went.

Us Sineath's have always had-and I can only assume always will have the same New Year's Day dinner:  Hog Jawls, Collard Greens (fresh from my Daddy's garden), Black Eyed Peas on top of Rice, and Cornbread.  Growing up, Eason and I didn't always appreciate the goodness of Collard Greens and Black Eyed Peas on Rice, but I tell you now it is very much appreciated.  Though, I'm not exactly sure if Eason has reached this appreciation factor yet.  Hog Jawls are one of the best things you can put in your mouth.  They are full of fattiness and goodness.  I have no idea why we eat them or what they represent for the New Year (definitely not anything healthy), but they are simply divine. Collard greens represent money for the New Year and black eyed peas represent all the coins.  

Unfortunately, Utah doesn't realize that they are missing out on a part of life by not knowing what hog jawls are.  Most of the folks don't understand what I'm saying when I talk about them--and even the meat man at our local grocery has no idea what I'm even saying when I ask about them.  So, we substituted hog jawls for bacon as fatty as we could find.  My daddy's collard greens aren't grown here in Utah so we had to substitute those for broccoli.  :).


Man that was one of the best meals I've had in 2012 -wink, wink :).

Our Christmas was wonderful, but I am not quite ready to blog about it yet.  Mainly because I wanted to blog about 2012 and prior to that I spent about an hour changing the top picture and background-almost deleting my entire blog out of frustration.

Hope this blog will tie ya'll over until I am ready to blog about our Second Christmas :).
