Chocolate souffle

I havent done any baking for a long time but I had guest over so I decided to whip something quick from what I had at home. I looked up some recipes and customized my own. I used this recipe with 6 6 oz ramkins and it was still too much. Maybe next time need to 1/2 the recipe.
Ingredients:
-1 cup of semisweet chocolate chips
-3 tb of butter plus some for ramekins
-7 egg whites
-3 egg yolks
-1/2 cup of sugar

Method:
-melt butter and brush to ramkins. Put in the fridge and brush again this time finish my adding sugar to the rims. Keep ramkins cold in the fridge.

-melt butter and chocolate chips in double boiler
-beat egg whites to stiff peaks adding sugar slowly
-beat egg yolks and mix with slightly cooled chocolate
-mix egg whites into chocolate mixture by folding little egg whites to the chocolate first and then dumping into the bowl of eggwhites.

Overall i was happy with the reaults but would like to try next:
1) using better chocolate
2) coming up with the exact recipe for 6 ramkins so there is no excess
3) using chocolate in the bottom, giada recipe with frangelico liquor sounds amazing....
