Candy Balls

1 lb. powdered sugar
1 cup softened butter
1 can sweetened condensed milk
melted chocolate
chopped almonds

Whip sugar, butter and condensed milk together. Freeze. When frozen, shape into balls. Place back in freezer until ready to dip. Melt chocolate in microwave in glass bowl. Dip balls into chocolate and cover with chopped almonds.

Wonderful Winter Chicken Stew

3 chicken breasts
4 qts. water
1 Tablespoon salt
1 cup each - celery, onion, carrots
peeled and chopped
1 6 oz. can tomato paste
1 Tablespoon Italian seasoning
1 16 oz. can red kidney beans
1 15 oz. can garbanzo beans
1 lb. sweet Italian sausage, sliced
1 16. oz pkg. home-style noodles
Parmesan cheese for topping

Cook chicken in water with 1 teaspoon salt until very tender (abt. 30 minutes). Remove the chicken and chop. Return chicken to pot and add everything else but the noodles. Simmer for approximately one hour. Cook noodles according to the package directions in different pot. Drain noodles and add to the hot soup mixture. Let the flavors mix for 10-15 minutes. Top each serving with a generous sprinkle of Parmesan cheese!

Pumpkin Fudge

1 cup evaporated milk
3 cups sugar
3 Tablespoons light corn syrup
1 cup canned pumpkin puree
1 tsp. salt
1 tsp. cinnamon
1 tsp. pumpkin pie spice
4 Tablespoons butter
1 tsp. vanilla

IN a large pan, combine milk, sugar, corn syrup, pumpkin, and salt. Cook over medium heat until boiling, stirring constantly. When mixture comes to a full boil, reduce heat and simmer until mixture comes to the soft ball stage. Remove from heat. Beat in cinnamon, pumpkin pie spice, butter, and vanilla. Cool, then beat until mixture is thick and loses its gloss. Spoon into a buttered 9x13 inch dish. Cool until firm. Cut into 1-inch squares. Store in an airtight container. Makes 4-5 dozen pieces.

Chewy Chex Mix

8 cups Rice Chex (or other Chex cereal)
1 cup coconut
1 cup sliced almonds
1 cup chow mein noodles
1/4 cup butter or margarine
6 cups miniature marshmallows

Combine Chex cereal, coconut, almonds and noodles in a large bowl. Melt butter over medium heat; blend in marshmallows and stir until melted. Pour over cereal mixture; spread on waxed paper to cool. Store in airtight container or individual plastic bags. Makes about 10 cups.

Cherry Nut Bread

1 cup sugar
1/2 cup vegetable oil
2 eggs
1 tsp. vanilla
2 1/4 cups flour
1tsp. baking powder
1/2 cup maraschino cherry juice
1 (8-oz) jar marashino cherries (chopped, juice reserved)
1/2 cup walnuts

Preheat oven to 325 degrees. Grease and flour two 9x5-inch bread pans. In a large mixing bowl, cream sugar and oil; add eggs and beat well. Stir in vanilla. In a separate bowl, whisk together flour and baking powder. Measure out 1/2 cup of the reserved cherry juice. (If there isn't enough juice add water to make up the rest.) Alternately add flour mixture and cherry juice to sugar mixture until all is well blended. Fold in cherries and nuts. Pour into prepared pans and bake for 55 to 60 minutes or until toothpick inserted comes out clean. Turn loaves out onto wire racks to cool. Dust with powdered sugar when cooled. Makes 2 loaves.

On the Go Food Ideas

Hi everyone - sorry I'm so slow getting this posted!

Here are ideas from the last meeting:

Omlettes in a bag: put all your omlette ingredients in a Ziploc bag (the real, name-brand kind), seal it up and boil it in a pot of boiling water. When it's all done, dump it out and enjoy. Yummy!!

Ice Cream in a Can: put all your ice cream ingredients in a can, then put that can in a #10 can filled with ice and salt. Roll it back and forth until it's done!

Tacos in a bag: Put all your taco ingredients in a bag of Fritos and enjoy!
