3 Things That Make Me Smile Today!

Haha! Yes! I am going to blog about 3 things that made me smile today!

First of all, Chef Andreas and Tabby invited me for tonight's
Singapore Idol Live Show! So sweet of them! Unfortunately, I'm unable
to go and support Tabby.

Secondly is that I'm so excited for Bangkok vacation with Meitong,
Tongyao and Lester! Finally, I can go and have a good vacation! YIPPY!

Thirdly, this sat is Mingxuan and Audrey's ROM. I am so happy for them
and I'd volunteered to be their photographer! Snap it away!! :) :) :)

PARTY NIGHT!~

This was quite some time ago. We had this study abroad that came to our school to study the asian food. There are our educational partner. Students from Johnson & Wales University. There are all americans by the way. So certain people from my class get to go for this BBQ at Mrs Kuan Lui's house. Somewhere at Bukit Timah Area. Her house is huge and we had like tables and chairs all over the yard. We had really nice food prepared by all the chef instructors. There were also lotsa wines - red and white. Beers and soft drinks. Lemme upload the photos and share with you at the same time.

Belows you can see we are literally feasting at the yard with wines, beers and soft drinks. I had like white wine with coke. Jemm says I crazy..






This is Chef Martin. He brought his speakers and he's DJ set down. By the way, he's also a DJ by profession. He used to spin at Equinox. You know Raffles City. That building, the hotel.. The top most level, there is Equinox. So that night, he was the DJ of the day. Playing all the nice funky music.


Then we were all gather back into the house. The house was so huge that it can contains sooooo many people at the dinning area. Everyone gathered all the drinks, we had yum seng. The typical the toast for the chinese. So it's something new to the americans. These photos were taken when Chef A was put in the middle of the crowd and they shout into his ears.. Poor Chef A.. LOL

Food & MORE Food!~~

Wassup peepz..

I'm back again with more updates. Been very busy working and attending school. Only have a day off during my entire week. Honestly speaking it's tiring yet I dont dread every single day of my life. Anyway show you some photos I took while chilling out with my friends during my split shift at Lauren Bernard Chocolatier.





I was chilling out with Leon at TCC and we order this!~ Lychee Jazz. It's new. TCC changed their menu and their food presentation. I'm rather quite impressed with TCC. It's a good place to chill as well.


Showing you some photos on the lesson that I'd. The lesson is on Fish & Shellfish. We get to cook the steamed sea bass in the chinese style. And red snapper with fruit vinigrette.

Last thursday, I went school together with Jeremmy and Lisi to attend this seminar for Chef Daniel Boulud. He came to my school and this visit will be air-ed in Asia Food Channel which you can find it on SCV. In other words, you'll see me on TV!~ Chef Daniel Boulud is very very famous in the US. He's a very humble man with great achievements and he alone had groomed many many outstanding young chefs in the US. You can google him. I guess you might even find him familiar. I get to take photo with him which is not with me yet. It's in Jemm's camera. Really had a good time.

Today class, I had a lesson on Vegetables, Mushrooms and Nuts. We cooked two dishes. James was the sous chef and I was the sanitarian of the day. So we get to work with one another together again.
This is what we cook:
Mushroom Puff!~ It's Cream Mushrooms (different varieties) wrap with Filo Pastry and put into oven and let it baked. I have a fetish for mushroom. So I loved this very much.. Ya I know, it looks like samosa. LOL!!~~


Next, we had Scalloped Eggplant. Origin of this dish is from France. It's almost exactly like ratatouille. All the mixed veg put into the dutch oven. Topped with a thin layer of bread crumbs and baked it. NICE!!~~~

UPDATES!!

Wassup People!!!!!!!!!

Finally I got some time off to blog. I'm just going to be very random in this post.

Yesterday in school, Chef Andreas taught us on principles of cooking. Chef Wilson did a demo on how filleting a fish. Of course, we had a big whole salmon fish. Caught it on video and as well as some photos. Then we went on to cook our Salmon Fillet with Cauliflower Espuma. It's delicious!! I show you my dish later. Then we also did our own Nonya Chicken Curry and Deep Fried Beer Battered Vegetables which includes Onion Rings, Cauliflower, Mushroom, Zuchini and Broccoli. Below are the photos.





This is the best part of the salmon: The Salmon Belly!!! I had one piece of this.. Hohoho!!


Jeremmy is deboning the salmon. Getting the bones out of the flesh. I deboned the rest of the salmon. I enjoyed plucking the bones out.. Haha!!


This is the final production. Salmon Fillet with Cauliflower Espuma! I did the plating all by myself. Nice right?? The green thingy is chive and the black thingy is caviar. By the way, caviar is expensive!!! It's commonly used in fine dining.

Another dish that we cooked. I was teamed with Shalini and James. We made the nicest curry. The right taste and the right texture and as well the color. But the paste wasnt very finely pound.



Since we talking about food. Lemme recommend you some of the top nicest patisserie or chocolatier around in Singapore. These are pastry boutiques where they only sells pastry or chocolates. Now currently in Singapore, there are more and more very very good patisserie and chocolatier opening right here. Bringing to us very good quality pastry which usually the ingredients need to import from overseas.

My recommendations do not comes in ranking. Firstly, I wanna introduce you this place called Paisley & Cream. Located at The Central at Clarke Quay. If you know where Cheers is, it's besides Club Marc. It looks very posh from the outside and you might think to yourself, it's pretty expensive to buy anything from Paisley & Cream. You are totally so WRONG! I walked into the shop, noticing that DBS Cardholder can get to enjoy 20% off from anything that you ordered from the a la carte menu. The posters in the shop was like so enticing. Something interesting about the shop. Everyday, they have different special and going at a discounted price in like so called set menu. It's a good place where you just wanna hang around with some friends and have a casual tea time. That day I went, they had the cupcakes special. They looked very very nice. The variety of cupcakes was pretty alot. I wasnt in the mood for any cupcakes. So I ordered something I love, that's bread pudding. I love bread pudding. Sound gross right? Hahaha But I can guarantee you it tasted awesome. Cafe cartel sells bread pudding soaked in rum and serve together with a scoop of ice-cream. It's nice. I always ate that. Anyway I looked at Paisley & Cream menu which I took a photo of it which is below. I was pretty surprised at the pricing. It's very very reasonable. It's NOT expensive at all. I ordered a cup of cappuccino which cost $2.50 and I ordered my bread pudding which cost $5. I ordered from a la carte and I paid through my card. I got 20% off. The bread pudding was huge. Compared the price I paid in Paisley & Cream and Cafe Cartel, it considered very cheap.



Next up, I would to introduce to you: Lauren Bernard Chocolatier. This is a chocolate boutique!! By the word boutique, you should have guess that it's not cheap ah. Located one shop away from where I have my attachment now. It's at The Pier @ Robertson Quay. This shop opens until late at night. It's a cafe where they specialized in chocolates and they also served pastries and hot drinks. Very nice place to chill with friends. Give you more details later. I heard this shop from Jeremmy. So one day, I decided to go in and buy some stuff. I went in, greeted warmly by the person. They had this small room which is chilled and there they displayed their chocolates. Very interesting. So I asked what recommendation from the person. And of course, she recommended something with hazelnut. A lot of people prefered love the combinationation of hazelnut with chocolate. I also! Hahha!! When you bite chocolate with hazelnut, many people dont know that they bite was hazelnut cause it's like biscuits. So I bought 2 bars of chocolate with the hazelnut (one for the cg and one for Wenling) and one the normal milk chocolates. I proceed to the counter and make payment then I came cross their pastries. Something caught my eyes. This pastry called Pleasure. One small piece cost $9.50. I bought one for Shilin. It's their signature pastry there. I dont have the photo of it, but you can try to go the website to take a look. One look at Pleasure, I know that it's not easy to make that. The layers of the pastry is very laboring that's why I can understand it cost so much for just one piece. In total I spent about $50 plus just on the 4 items. The chocolate with hazelnut is about $15 plus. Pricing wise, I think it's ok because the ingredients they used are all imported. They used Valrohna chocolates. Valrohna chocolates are like the premium chocolate in the chocolate world. It's from France. You can look at their website as well. Once a while, I got Valrohna chocolates as well.. Hahah!! Cause my school uses Valrohna chocolates!! HOHOHO!! Anyway the details of Lauren Bernard Chocolatier is here:

Next one I wanna introduce to you is: CANELE PATISSERIE CHOCOLATERIER!!! I guess you may find this very familiar. This is because they have more than one outlet here in Singapore. This is also a pastry boutique. I LOVE Canele!! Basically I love the atmosphere of the cafe at Raffles City. The display counters with all the pastries and chocolates just looked sooooooo enticing. The ambience inside is nice. Dimly lit and the staff wore black shirt very classy look. The outlet at Robertson Walk which is also very near where I worked, is quite huge. They got very nice furniture, brightly lit and the end of the outlet, they got sofa seats. I like the boxes where they packed your pastries in there. NICE! Comes in different sizes and colors and very nice paper bag. Haha!! This is the packaging. I haven introduce the food yet. They served more than just pastries and chocolates, they also serves pasta, sandwiches, crepes, salad, soups and many more. You can check out their menu for the different outlets. Jeremmy said that it's molecular gastromy. I dont know how true is that. Anyway I will blog another time about molecular gastromy cooking. I guarantee it will blow your mind and causes your drool. Anyway in total, there are 4 outlets of Canele Patisserie Chocolaterie in Singapore. So far the nicest pastry I ever had from Canele was: Le Royale. Description: Chocolate mousse 66% layered with hazelnut feullitine, almond success and chocolate genoise with rum. You realized that it had hazelnut in it!! It's very nice. One small slice of this cost $7. 1kg whole cake is $71.50. It's boutique. What can you expect. You can check out wide range of macaroons, chocolats, entremets et petits gâteaux, patisserie and boulangerie et viennoiseries from their website with photos!!~

Another shop I wanna introduce is called: NECTARIE Le' Dessert Patisserie! It's located right in the center of the happening place.. Clarke Quay.. Very near to the fountain and it along the stretch together with Clinic. I went to have some afternoon tea with some friends. The shop's interior is very nice, super limited seats in the shop itself. It's located at Clarke Quay, all the people usually dine outside the shop. Pricing is reasonable. 5 of us, in all we paid about $60++. All of us had one drink and a pastry. I ordered their strudel. It's one of the topseller at Nectarie. They got different fillings. The custard is superb!! My friend had one of the cake which was just so so.. Waffle was so so either, not enough flavor from the waffle itself. They have special promotions which you can check out from time to time from their website. It can get very crowded at night as it's located at the heart of all the partying places..

That's about all for my pastry recommendations!! Hahaha!! I'm hungry now.. Haha!

Anyway I was walking with my friends and we came upon this place called : 25 Degrees Celsius, somewhere at Chinatown. Quite amazing. The interior is very nice. You walked in, you thought you were at some book store. Then you walked further in, you saw a small cafe! Nice! They sells cookbooks which is quite alot of collection and they sells food. Very nice!


During my exams period last term. We went to Audrey's place for revision and the guys cooked the meals. I was so hungry that I forgot to take photo on Jeremmy's Signature XO Sauce Chilli Glass Noodles with Prawns. It's very nice, it's spicy but very delicious. After I ate that, Leon cooked one super big plate for pasta for me.
Pasta Carbonara! He did everything from scratch!

After 2 dishes, I also got this.

Tom Yam Soup. Very spicy as well. We were practicing knife skills for our exams and all the carrots we cut went into this Tom Yam Soup.
I ate all these and I was so darn full la.. Leon made his favourite Panna Cotta as dessert which went nicely wrong. Was suppose to be put in chiller to have the jelly texture and he put in freezer and didnt watch the time, it freezes and we took it and pour a layer of chocolate on top of it and it tastes like ice-cream!! Forgot to take photo also.. Hahaha!!
The next day, we had leftover stock and creme for the pasta. We had lotsa leftover shitake mushrooms. They decided to make mushroom soup. I love mushrooms!! So nice lor.. It's totally from pure ingredients. This beats campbell soup hands down!
