Fall Hikes



Okay, so the second thing that I love is hiking in the fall, in fact I love it more than canning peaches. It brings a certian exhilieration seeing the intense colors of the changing trees and I become obsessed with taking pictures.

Yes, we canned all 60 jars of peaches, froze 40 bags of peaches from just 10 boxes of peaches!



Who says Yoga and Peaches don't mix?

So here comes fall... The time of year that I love, when the leaves change color, Einstein's brings out their pumpkin bagels with the pumpkin cream cheese, and I go a little crazy in the head with my friends and family canning peaches. I figured that last year I laid down some big bucks (You want a ballpark figure probably around $100) and I believe that I had a total of 2 jars and gave away the other 48 jars. This year in addition to the old regular peach caners we recruited my sister Jenny and her daughters, we are think of starting a union if anyone is interested. Charitable, some might say but I think that I just love the peach tart that we make at the end of our canning fest.

Santa Fe Style Rice & Beans - 158013 - Recipezaar: "SERVES 4 -6 (change servings and units)

2 cups Mexican rice
1 (15 ounce) can black beans, drained & rinsed
1 (11 ounce) can Mexican-style corn, drained
1/2 cup chopped onion
2 cups of shredded mexican cheese
1 teaspoon oil
1 (5 ounce) can of chopped green chilies
1/2 cup chopped onion
1-2 tablespoon chopped jalapeno
1 cup sour cream
Directions
1Preheat oven to 350. Grease an 8 x 8 baking pan.
2In a bowl, combine cooked mexican rice, black beans (rinsed and drained), corn (drained)and onion.
3Put into baking dish. Bake for about 15 to 20 minutes.
4While dish is baking, make sauce.
5In a sauce pan, saute onion and jalapenos in oil until onions are soft. Add green chiles and sour cream. Cook until smooth.
6Remove baking dish from oven and pour sauce over casserole and top with cheese.
7Bake about 5 to 10 minutes longer until cheese is melted."

Wyatt's 1st b-day and the people go a little Crazy!







Alright, I'm not going to say to much until I know that I can make this work. So I got the picture to post so now I will write a little more because I know that, "I got some explaining to do..." So for my nephew's first birthday they decided to have a costume party and those who know me know that I love "Nacho Libre." Now I have never been mistaken for him but thought that this would be a good opportunity to show off my Luchadora skills. You can e-mail me if you would like to borrow this costume next year. I won't guarantee that you will look as good as me though.
