Mdm Tan's version of Fish Head Steamboat aka 鱼头炉

Thanks to mom's recipe, I can now have my favorite comfort food at home anytime, anyday! This is definitely a yumilicious refreshing soup choice. However, there's no definite measurement of the ingredients. Everything is based on agaration.

My first attempt was a nightmare. I almost ruined the whole soup base just because I put too much “大头菜” and the whole pot of soup was so salty! 😹😹😹 what I'd did to salvage my soup - I scooped out a few cups of soup and replaced them with boiling water and more turnip and yes, it helped and the soup turned out great!



Soup stock ingredients:
大头菜 (less than half a palm size and wash lightly)
Turnip
Water (about 4 big bowls)

Marinate together for at least 2hrs.
Fish head (鱼头)
Sesame oil
Light soy sauce
Hua diao jiu (花雕酒)
White Pepper & coarse black pepper

4-6 Tomatoes - quartered
Fried yam
Sour plum (4-5)

Depending on your preference, the below are optional.
Cabbages
Fish Maw
Inoki mushrooms
Beancurd skin
Prawns
Shabu Pork slices

NOTE: Rinse the turnips in cool water. This will remove any bacteria or dirt.

Additional dish of Stir-fied Kailan with black fungus to go along with the meal =)
