Dragon Fruit Honey Lemon Jelly

Dragon Fruit Honey Lemon Jelly
Yields: About 30 pieces
Ingredients:
  • 1L water 
  • 100gm sugar (or according to taste)
  • 1 sachet of Agar-Agar Swallow Globe Brand® (or use agar agar strips)
  • 180gm dragon fruit flesh (I used 1 red flesh for puree and 1 white for cut fruits)
  • 200gm mild flavored honey. (I used 150-200gm of honey water)
  • 2-3 Tbsp lemon juice (30ml)
1. Mash dragon fruit with a fork. Set aside.
2. Bring 1L water and sugar to boil.
3. Add 1 sachet of Agar-Agar powder into the boiling syrup. Bring it to boil and let it  simmer for 1-2 minutes.
4. Turn off the heat and put in dragon fruit puree, honey and lemon juice.
5. Pour agar-agar into jelly moulds.
6. Let it cool down and harden. Chill in fridge.
7. Remove by prying the sides with a toothpick.





1st attempt verdict: CMI IMO
Apparently, my first attempt was a failure IMO because the honey taste was too strong and the agar agar turned out to be so brown (image above tells). I believed that is why the recipe stated mild flavoured honey which meant to give a light honey taste. Supposedly the honey I'd used has strong flavored Manuka taste and the agar agar turned out to be honey flavoured instead of dragon fruit honey lemon flavoured agar agar!! So I decided to use red flesh dragon fruit and reduced the honey quantity instead on my next attempt.
2nd attempt: 9/10


On my 2nd attempt, I used 3 spoonful of Manuka Honey with 200gm of water. This time it was almost to prefect!!
